Claypot Rice in Rice cooker

Part off with Ceci and head down to Tampines mall to kill time last night after Wimbly Lu . Decided to cook simple Claypot Chicken Rice tonight!
Simple ingredients


(A)
  • 2 cups rice - washed
  • 2 cups water
(B) - Marinated together
  • 600gm or 7 chicken wings - chopped into pieces
  • 3 or more dried mushrooms - soaked till soft and sliced
  • 3 tsp light soya sauce
  • 3 tsp dark soya sauce
  • 3 tsp oyster sauce
  • 6 tsp sesame oil
  • Pepper
  • A few slices of ginger - shredded
  • 1 Chinese sausage - sliced thinly
  • Garnishes
  • Fried shallots
  • Spring onion - cut
  • Chinese parsley - cut
Method :
  1. Cook (A) in a rice cooker.
  2. Meanwhile, prepare the chicken by heating a little oil in wok to stir-fry ginger till lightly browned.
  3. Add in (B) to cook till half done.
  4. When the rice is half cooked (25mins after press 'start' on my rice cooker), pour in the half cooked chicken on top.
  5. Sprinkle Chinese sausages on top and continue to cook till rice is done.
  6. Once cooked, let the rice stand for 15mins before eating.
  7. Fluff the rice and serve hot with garnishes.



Notes :
Since ingredients added to the rice contain moisture, always use 1 cup rice + 1 cup water to ensure the right texture of the rice no matter what cup you use.
2 cups rice is 300gm for my rice cooker measuring cup.

Off to Wimbly Lu

Dear is attending EFY's wedding lunch followed by dinner and drinks with his China client so I am a free woman today! Whatapps Ceci after spring cleaning my room for a cuppa at Wimbly Lu @ Jalan Riang.

This is one of the shortlisted quaint cafe that I wanted to visit since months ago and here we are at Wimbly Lu! Rather an ulu place, it is hidden among the private estates off Upper Serangoon but definitely worth going!!


And our pick are?? 
Waffles with salted caramel ice-cream @ only $8.50!

The moment we stepped in, I was like wowwww..... simply love the sun roof design and furniture which filled the whole cafe with nature feel. ^.^

Cafe specializes in Chocolate!

I love this cafe and will definitely return for their signature "Black Out Cake"!!
