Blueberry Muffins

It was January 2010, the spring that I returned from Boston, MA. Betty Crockers Blueberry Muffin ready mix. Comes with a can of blueberries soaked in blueberry juice. Mom loves blueberries. Even when there is banana nut mix, she would always pick the blueberry and pretend that there is no any other choice of muffin mixes.

Beat 2 eggs, add 1/4 olive oil, 3/4 milk, add in the mix. Dry the berries and gently add them in and stir. Divide them into six portion on the big muffin tray with baking cups on them. While dividing, pre-heat oven to 425F. 425F? An accurate conversion by formula I insisted: (425 x 5/9 - 32)C = 204.111.. the oven only comes in 10s so the nearest temperature I can set: 210 degrees. Quick conversion method? 425/2 ~ 212.5C not that far off.

Big muffins needed more time. How long? 21 minutes.

I always felt the muffins were a bit too sweet. But Mom didn't really say anything other than it was good. Because of the blueberries and flavoring really or so I thought. Jessica, the senior would mention that the taste is... artificial. Yet... there was someone would happily accept it... the surprised smile, the happy smile, the thank you... that very first time I presented those muffins to her... I melted away... it is without a doubt that this selfish boy, wanted to see that smile again... The smile that was lost that day....

How did that happen? Thats another story for another time.
