When I came home from school I was exhausted. I haven't been use to getting so much new information in such a short timespan. So I decided to make something easy for dinner! My favourite dish of all times (and that is very loved by the Mr.) Chicken Curry.
My recipe is not classic in any way and isn't very spicy. It is very kid-friendly and if you are a sucker for a good creamy sauce this is definitely a recipe you need to try!
The recipe:
For two servings i used:
- 1 yellow onion
- 300g of chicken tenders
- 4 tablespoons of curry
- 1 liter of water
- 1 chicken stockcube
- 1 tablespoon of butter
- 1 pack of cream cheese (200g)
- Season to taste
How do you do it:
- Prepare your rice as you normally do. I used a mix og regular white rice with a little bit of wild rice.
- Preheat a pan to medium-high heat and melt the butter.
- Put in the curry and let i sweat for a minut.
- Chop the onion into very fine pieces and put it into the curry
- Cut up the chicken in smaller pieces if you like - not a must, but I like to eat without a knife.
- Put a kettle on and heat the water
- Put the chicken into the pan.
- When the Chicken is fried all over, put in the water and the stockcube.
- Now let this simmer for as long as possible or until the rice is done.
- Put in the whole pack of cream cheese and stir until there is no lumps of cheese.
- Season and bring to a boil.
