Let's get this going again!!!
Hey sisters, sorry it has taken us so long to transition from Lisa Bringhurst as the RS Media Specialist to Kim Chournos. We are working on a new email system as well that we hope to have working by the end of the week! Thanks for your patience!

Lemon Recipes
I was going to post pictures from our activity but when I downloaded them I decided that the gym is no place for the pictures! Maybe it was because our activity was about lemons, but they all look a little yellow. Of course, it could just be that I am bad with picture taking...volunteers...anyone?
Here were a couple of the yummy recipes though...
Lil' Citrus Muffins-Kat Andrus
Muffins:
1 c. all purpose flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1/4 c. butter or margarine, softened
2/3 c. sugar
1 egg
1/2 c. sour cream
1/2 tsp. vanilla
2 tsp. orange, lemon or lime zest
Topping:
2 TB butter or margarine, melted
1/3 c. sugar
Preheat oven to 375. For muffins, lightly spray cups of mini muffin pan with nonstick cooking spray or line with paper liners. In small bowl, combine flour, baking powder, baking soda and salt; mix well. In bowl, beat 1/4 c. softened butter and 2/3 c sugar until well blended. Add egg; beat until smooth. Mix in sour cream, vanilla and zest. Add flour mixture; mix just until dry ingredients are moistened. Do not over mix. Using a small scoop, drop a rounded scoop of batter into each muffin cup. Bake 12-13 minutes or until light golden brown. Do not over bake. Cool in pan 3 minutes. Remove from pan. Cool slightly. For topping, dip top of warm muffins into butter and then into sugar. Serve warm.
Brazilian Lemonade-Char Ames
4 juicy limes (try to find ones with thin, smooth skins; they're the juiciest and the thin skin cuts down on the chance of your drink being bitter) 1 c. sugar, 6 c. cold water, 6 TB sweetened condensed milk
Mix cold water and sugar very well and chill until ready to use. This step can be done ahead of time.
Wash limes thoroughly with soap (I just used hand dish washing soap or regular hand soap); you need the soap to get the wax and pesticides off of the limes because you are using the WHOLE lime, baby! Cut the ends off the limes and then cut each lime into 8ths.
Place 1/2 of the limes in your blender.
Add 1/2 of the sugar water, place the lid on your blender, and pulse 5 times. Place a fine-mesh strainer over a pitcher (the one you'll serve the lemonade in) and pour the blended mixture through the strainer and into the pitcher. Use a spoon to press the rest of the liquid into the pitcher. Dump the pulp and stuff in the strainer into the trash. Repeat with remaining limes and sugar water. Add sweetened condensed milk; DO NOT leave this step out unless you will die of a horrible sweetened condensed milk allergy because this is the secret ingredient! You may want to taste test it at this point. If it's bitter, just add some more sugar and maybe a little more milk. Serve immediately over lots of ice. This does not keep well, so don't make this in advance.
The activity was so much fun! Thank you Mary Murdock and committee! If anyone has any lemon recipes to add, please send them to me and I'll get them posted.
