So sometime last week, we were expected to get globs of snow. Everyone was causing a ruckus and snatching bread of the shelf, left and right! I decided it was a perfect time to try out my new Crock Pot that Kyle got me for Christmas, I was ecstatic!
oh p.s. no snow, actually it almost reached 70 degrees about 3 days later... WELCOME TO TENNESSEE!
Here's my recipe, I studied a bazillion before creating my own...and its yummy! warning: It isn't the quickest recipe but it is worth it!

Libby's Crock Pot Apple Butter
12 large apples (Could definitely use more!)
2 tsp cinnamon
2 cups white sugar
1 cup brown sugar
1/4 tsp cloves
2 dashes of nutmeg
1 T vanilla
Peel, core and half all apples.
I'm sure you could have used one of those fancy-schmancy apple peelers... but this is how my grandmother does it!
Throw them all in your crock pot with 1Tbsp of Vanilla.
Cover and cook on low for about 7 hours.
(about 2 hours in, the magical mixture starts to make the house smell insanely delicious!)
At about 7 hours, you can mash the apples with a fork. They will mush apart like butter!
Stir in the sugar and spices!
Cover and let meld together for 5-6 more hours.
I ended up using an immersion blender to mix it to the perfect consistency. If you don't have one, I'm sure you can use any mixer or just leave it chunky!
Over the time, it starts to darken like apple butter!
The ONLY bad part is that is only makes about a jar and a half... but it is finger-lickin' good!
Next time, I think I will use MORE apples! And maybe even granny smith ones... but regardless, this recipe was a success!!!
