I heart Bountiful Baskets

So recently Kyle and I have made a change in our eating habits. We now eat strictly fruits, vegetables and very lean meats. With a few grains here and there. My sister introduced us to a cool website where you order fruits and vegetables and sometimes they have other things on the side. Its really neat. Kinda like a farmers market all put together for you in one basket. Every week it is different with a basket of assorted fruits and one of assorted vegetables. One week I got a bunch of Anaheim Peppers (along with tomatoes onions broccoli and other vegetables). I had like 15 peppers. I thought "What am I going to do with all these peppers?" Well I went online and found an awesome recipe for Chile Rellenos. So not exactly with my diet but its neat and forces me to get creative with cooking new things and learning how to mostly substitute to make them as healthy as I can, though Chile Rellenos isn't going to be all that healthy given that it is fried in batter and oil. But that was my cheat meal.
This week, my fruit basket had a ton of black grapes, raspberries and strawberries. So for breakfast I made crepes filled with fruit. Sticking to my diet I should make my protein pancakes and role the fruit up in that. In my vegetable basket for this week I got a bunch of green bell peppers... besides salsa how am I going to use all these extra peppers? Well I also got a ton of tomatoes and a couple of onions. So I found a recipe for stuffed bell peppers. So yummy. I substituted the ground lamb for ground turkey. Less sodium calories and fat. So delish. It is really neat. We basically eat fruits and vegetables with lean meats every day... and compared to my other diet... I am losing weight this time and I feel healthier and I love eating delicious fruits and veggies all day. If you want any of these recipes let me know or to check out Bountiful Baskets click here. Its really great. You don't have to buy every week if you don't want to. You just log on on Mondays at 8pm (hurry cause these go fast) find a location nearest to you and order a basket and pick it up that Saturday. Its only 15 dollars and you get your money's worth plus a healthier lifestyle. I have stopped feeding Porter junk food and he just snakes on fruits all day in between meals. I really love it!

So much to tell in so little time

This would be me finishing the great 10K I did on the 24th. Boy was it amazing! My time was 1:12:59. Not bad for my first race. I am going to try to run another 10K race in the next couple of weeks and shave like 15 min off of my time. I run 5 miles every day so it took a lot out of me to go the extra 1.2 miles. I took my time and a good even pace so I ran the entire way without stopping. It was a blast. I am signing up to do the Rock and Roll Marathon in Vegas in December. That is 13.1 miles. So I have a lot of training to do. I am going to run a full marathon next spring then after that work on increasing my speed each time I run. I am very excited!

And next Nora's blessing. It was so beautiful. I wish more friends and family could have made it. Kyle did such an amazing job and the dress was beautiful. It took my mom 2 years to make that dress. She did a beautiful job. And Kyle gave her the most beautiful blessing. It was also my brothers mission farewell. He gave such an amazing talk. I am so proud of him. He will be leaving Wednesday for the MTC. We will miss ya buddy!
THE ZOO!!!

The trip to Hogle Zoo. Porter loved it. Yes I am holding him and Nora. What a long hot day. But it was a blast!
