The Ice Dream Cook Book

As you all know,that the Avocado Icecream that I sent for the Health Nut IceCream Challenge has won me the Ice Dream Cook Book .On Tuesday , I received The IceDream Cook Book from Chef Rachel Albert-Matesz,The Healthy Cooking Coach.Thank you Rachel for sending me this lovely book of healthy icedreams.Will definitely make and learn a lot of healthy ice cream alternatives from this lovely collection of recipes.

Tasty and Healthy Juices on Thursdays : Juice Recipe 5 & Awards from Jyoti & Thank You Card from Love2Cook

Today isThursday and time for me to post one more tasty and healthy juice recipe.This recipe is very simple and easy and made with very common ingredients we have in hand.This juice was very tasty and delicious.

Let us see how this healthy juice is made------------


These are the fruits and veggies used in the juice---------------

Apples.................7
Carrots.................4
Ginger..................1inch

Rinse the fruits and veggies under cold water.Juice the apples followed by carrots followed by ginger .Stir the collected juice in the bowl and serve immediately in serving glasses.

This yielded 5 small glasses of juice. The juice was orange in color.

Healthy Whole Green Moong Kheer/Payasam and Participation Award from ShamaNagarajan

You might have noticed that I use very less sugar or no sugar in my sweet recipes.I use dates,honey or other fruits to sweeten my dishes.In today's recipe I used Agave Nectar.I never heard about it before until I came across this nectar in Gita's recipes.So I wanted to try this in my kheer recipe.It tasted very good without leaving any after taste on the tounge.I came across moong kheer in different blogs and everyone had a unique touch of their own in the recipes.Today's recipe is my version of a very simple and easy to make kheer with whole green moong daal.

I made this when we had friend's come over for dinner.I could not take step by step pictures but sure am going to explain it in steps.We all enjoyed the kheer and hope you would too.We enjoyed second servings too.

Let us get into the details of making this-----------


Main Ingredients :
-------------------
Whole Moong.................1cup
2% Milk..........................4cup

Seasoning Ingredients :
------------------------
Agave Nectar..................1/4cup
Ghee/Butter.....................1tbsp
Cardamom......................6(powdered)

Garnish :
----------
Cashew...........................few
Golden Raisins.................few

Preparation :
--------------
Wash the whole green-moong well and pressure cook for 4 whistles.

Place a heavy-bottomed pan on the stove on medium heat and pour the milk in it and let it boil.

Once the milk reaches boiling point add the cooked moong to it and reduce the heat and slow cook for 10 minutes so that the milk turns golden in color.

Meanwhile in a pan add the ghee and fry the cashews and raisins till golden in color and switch off.

Now add the agave nectar and cardamom powder to the kheer and stir well.Finally garnish with cashews and raisins and turn off the stove.

Yummy and healthy Whole Moong Kheer is ready to serve.It can be served hot or cold.

Note:
------
1) I used 2% milk ,you can use milk of your choice.

2) I used agave nectar for sweet,you can use sugar ,honey ,jaggery or dates to sweeten your kheer.

3) We prefer less sweet so I used1/4 cup of sweetener,you can adjust sweet according to your taste.

Drumstick/Munagakaya Curry(Healthy and Lowfat) & Awards from Pavithra Srihari

This is a simple and easy recipe with Drumsticks.My kids love anything made with drumsticks as they like to  chew on them for a long time.Particularly in Andhra we use it in rasam,sambar,majjigapulusu(kadi) as well as in curries.Even a nice and tasty pickle(Achar) is made out of these drumsticks in Andhra.Drumstick as well as drumstick leaves are very good for health.

Today I am showing the preparation of a simple Drumstick Curry----------------


Main Ingredients :
-------------------
Frozen Drumsticks..........................15 pieces(thawed)
Green Pepper.................................1small
Tomatoes.......................................2
Onion............................................1small
Green Chillies................................3

Seasoning Ingredients :
-----------------------
Canola Oil.................................2tbsp
Ginger......................................1inch piece
Garlic.......................................3cloves
Poppy Seeds............................1tsp
Coriander Seeds.......................1tsp
Cumin Seeds.............................1tsp
Turmeric..................................1/2 tsp
Paprika Chilly Powder..............1/2tsp
Salt.........................................to taste

Garnish :
----------
Cilantro

Preparation :
-------------
I thawed the frozen drumsticks and then cooked them in the cooker for 2 whistles.While the pressure was cooling down I cut the green pepper into 2inch size pieces and diced the onions and tomatoes into small pieces.

Place a pan on the stove on med-high heat and pour the oil into it.Once the oil is heated up add half the onion pieces in it and fry till they turn golden.

Now add all the green pepper and turmeric to the onions and stir well.

While that is cooking make a paste of the ginger,garlic,poppy seeds,cumin seeds and coriander seeds.Now add this paste to the pan and stir well .Add a pinch of salt and cook it till the raw smell is gone.

Now blend the tomato pieces and rest of the onion pieces and add this paste to the pan of spiced veggies and stir well and cook.

Now take the drumsticks from the cooker and add them to the spiced veg mix in the pan.Add paprika and salt and let it cook till all the spices blend in well.Garnish with cilantro.

Yummy Drumstick curry is ready to be served with hot rice.

Oats & Fruit Smoothie with POM and Award from NithuBala

This Oats & Fruits Smoothie can be had for breakfast or for refreshment in the evening or can be had anytime you crave for something nice and cold in summers instead of sodas and sugar rich beverages.



Main Ingredients :
-------------------
Cold Milk......................2cups
Quick Oats....................1cup
Banana..........................1ripe
Blueberries....................1/2cup
Clementine....................1
POM juice....................1(8oz)

Preparation :
-------------
Add all the above ingredients in the blender and blend well.Once the ingredients are nicely blended transfer the smoothie into serving cup and serve it immediately.It was very tasty and filling.Try it out, you will love it.

Note :
-------

1)I did not add any sweeteners in this smoothie as the fruits had enough sweetness in them.If you like it more sweet you can add sugar or agave nectar or stevia or any sweeteners you like.

2)I had very hard time to get a picture of this smoothie as the flash was reflecting, finally could get this one a bit clearly :-)

Aratikaaya Perugu Pachadi/Plantain Yogurt Chutney & Awards from Lopa and Subhashini

This is a very yummy yogurt chutney.In Andhra Pradesh many recipes are made with yogurt as the base.One among them are the yogurt chutneys.Today I am going to post an entry with Plantain.Aratikaya Perugu pachadi or Plantain yogurt chutney is a very healthy and delicious dish.


Main Ingredients :
--------------------
Plantain/Raw Banana....................1(large)
Yogurt..........................................2cups

Seasoning Ingredients :
-----------------------
Olive Oil...............................2tsp
Chana Daal...........................1tsp
Urad Daal.............................1tsp
Mustard Seeds......................1tsp
Cumin Seeds.........................1tsp
Asafoetida.............................pinch
Red Chilly..............................1
Turmeric................................1/2tsp
Salt........................................to taste
Curry Leaves..........................few

Garnish :
----------
Cilantro...............................few leaves

Preparation :
--------------
Rinse the Plantain very well and peel the skin.Keep the peel aside.Pressure cook the plantain for 2 whistles.


While the pressure is settling down let's get the yogurt ready.Take the yogurt in a bowl and whisk it well and add little turmeric and salt.(Thick buttermilk is fine too.Do not use diluted buttermilk).


Now once the pressure is off take the cooked plantain out of the cooker.Let's get the seasoning ready.


Take a pan and place it on the stove on medium heat,add oil, mustard seeds,chana daal,cumin,urad daal,red chilly and asafoetida.


Once the seasoning is ready,add boiled plantain to the seasoning and mash it well.Add turmeric,salt and curry leaves let cook for a minute and switch off the stove.


Now add this seasoned mashed plantain to the yogurt.Adjust salt accordingly and garnish with cilantro.


Simple and easy Plantain Yogurt Chutney/Plantain Raita is ready to serve with hot rice or roti or can be eaten as is.

Note :
-------
1)In this yogurt chutney boiled plantain can be mashed for crumbly texture or you can grind to make it very soft.

2)Yogurt should not be sour.

3)A very cooling recipe for the summer.
