Mustard Flavored Green Chilly / Raiwala Marcha

I knew about stuffed dried chillies but I never tasted fresh chillies pickled in mustard until I met my Gujarati neighbour Janvi.One day she shared with me a bottle of homemade pickled green chillies.She told me that these chillies can be used as a side dish to any meal.She said that these chillies are a must in their meals and they have them even with snacks. Being a chilly lover I was very excited to taste these mustard flavored green chillies.They tasted very delicious and went very well with rotis,daal and rice.These pickled chillies are sure to make a meal more inviting and spike up the taste buds.


Main Ingredients :
----------------------
Green Chillies...........................1lb(thick and long)
Turmeric Powder.....................2 tsp
Salt..........................................1/4 cup(to taste)

Seasoning Ingredients :
-----------------------------
Mustard Oil..............................2tbsp
Powdered Jaggery....................2tsp
SplitYellow Mustard.................1/4cup
Lemon Juice..............................2tbsp

Preparation :
-----------------
Wash the chillies and pat them dry with a clean towel.Leave the tips on and slit the chillies from the top(do not let it break into 2 pieces and also the tip of the chilly is intact) .


Now take the salt and turmeric in a bowl and mix them together and start stuffing the slit chillies.In this manner stuff all the chillies with this powder mix and keep them in a bowl and let them rest 4 to 5 hours.In between shake the stuffed chillies in the bowl every 1 hour.


After resting ,you might see that the chillies are leaving some liquid in the bowl(if there is more liquid drain it) or sometimes the chillies might seem to look just wet.Now remove the chillies and air dry them on a paper the whole night.


Next day , place a pan on the stove on low flame,once the oil is warm , switch off the stove and add the split mustard seeds and jaggery.Let the jaggery melt in the warm oil.Once the oil is luke warm, add the air dried stuffed green chillies to the oil and coat the chillies with the oil.


Immediately transfer the chillies to sterile bottles and add lemon juice them.After adding the lemon juice close the lid of the bottle and shake it up and down so that the oil and the lemon juice blend in well and flavor the chillies.

Let the bottle of chillies rest on the counter for 24 hrs and use it from the following day.You can see the juices retaining in the bottom of the bottle.Shake the bottle to blend in the flavors.After 24 hrs you can refrigerate the chillies for long term use.


These Raiwala Marcha is so easy to prepare and delicious to taste.

Note :
----------
1)Make sure to do this when kids are not around so that they are safe from the spice of the chilly.

2)If making in large quantities it would be nice to have some help,so that when one is slitting the chilly other one can stuff it.

3)My friend particularly insisted on using mustard oil (Dabur Company is best she says) for seasoning the chillies.

4)Adding little jaggery gives a hint of sweetness to the chilly spice.

5)If you don't like the hotness of the chillies,remove the seeds before stuffing.

6)If turmeric and salt powder remains after stuffing use it later in other dishes.

Tried and Tasted on Tuesday's (3T's) : Sept 28th 2010

It's time to share the tried and tasted recipes of the day.Today I am sharing with you all 2 delicious recipes that I have tried from 2 wonderful bloggers.The outcome of both the dishes was very flavorful and we all enjoyed tasting them.

Here are the dishes without any delay---------------



I followed her recipe as is and it tasted very delicious.I used the frozen mixed veggies that I had available and also added red capsicum as per her suggestion in the recipe.We enjoyed this rice with a drizzle of lemon juice and some sweet-potato chips as a side.Thank you Priya for sharing this delicious recipe with us.



This is totally a very new way of making tomato chutney for me.I liked the addition of cashews and coconut to this chutney.It has given additonal richness and flavor to the dish.We enjoyed this chutney as a side dish for idly's.Thank you Pari for sharing this delicious chutney recipe with us.

Tasty and Healthy Juices on Thursdays : Juice Recipe # 21

Hello friends, today I am sharing with you a new juice recipe that I tried a few days ago.It was a great hit and wanted to share it with all my blog visitors.It is a combination of 4 wonderful and delicious fruits.

Juice Recipe # 21:
----------------------


We need the following ingredients for making this juice----------------

Pineapple....................1(ripe)
Red Grapes................1bunch(small)
Oranges.....................3(med.)
Red Plum...................1(big)

Preparation :
------------------
Rinse the fruits under cold water.Clean the pineapple by trimming the outer layer and cut it into long pieces.Peel the oranges and deseed the plum.Now juice the oranges followed by grapes followed by plum followed by pineapple.Stir the collected juice in the bowl with a ladle so that the juices blend in and serve the juice immediately.

This yielded 2 large glasses of juice.The juice was reddish-yellow in color.

Note:
---------

1) The juice was very delicious but as my pineapple was very ripe, I ended up having more pulp than juice.I will soon let you know what I did with the delicious pulp.

2) As always, do check if the ingredients used in the juices are okay for you ,before you make these juices.

3) In a juicer always try to juice the soft fruit followed by hard fruits so that you can get the maxium juice out of the soft fruits.

4) A food that is healthy for one person may or may not be healthy for an other person.Always check with your doctor before you try these raw juices.

Tried and Tasted on Tuesday's (3T's) : Sept 21st 2010

Today is Tuesday and I am back with a recipe that I tried and tasted from one of our wonderful blogger friend Suma Gandlur's recipes.I love the way she presents her dishes and how she shares the  authentic dishes from Andhra Pradesh.

Here is the recipe without further ado----------------

1) Gongura Pappu from Veggie Platter by Suma Gandlur.

Bendakaya Popu Kura/Okra Flavored with Tamarind

Today I am posting a very simple and delicious recipe with Okra.This is a low-fat, easy to make and yummy to taste recipe.This dish goes very well with rice and roti.

Let us see how this delicious curry is made----------------


Main Ingredients :
------------------------
Okra....................................1lb

Seasoning Ingredients :
--------------------------
Oil.......................................1.5 tbsp
Chana Daal..........................1tsp
Urad Daal............................1tsp
Mustard Seeds.................... 1/2tsp
Cumin Seeds........................1/2tsp
Turmeric..............................1/8tsp
Red Chilly............................2
Asafoetida........................... pinch
Curry Leaves........................1sprig
Tamarind Paste.....................2tbsp
Salt.......................................to taste

Preparation :
-----------------
Rinse the okra ,pat them dry and cut into small pieces.Place a pan on the stove on medium high heat and add oil to it.

Once the oil heats up add chana daal,urad daal,mustard ,cumin and red chillies to the oil.Once they start to splutter and turn golden add asafoetida and curry leaves.

Once the seasoning is ready add the cut okra to the pan and stir well so that all the ingredients mix in well.Cook covered for 2 minutes.

Now remove the lid and add turmeric ,thick tamarind paste or thick tamarind juice and salt to the okra and stir well and cook covered for 5 more minutes or till done.Once done transfer to a serving bowl.

Delicious Okra Curry flavored with Tamarind is ready to be served with hot rice or roti.

Notes:
------------
1) You can use frozen okra too.Thaw them before you cook.

2) Adjust tamarind (more or less) according to your taste.

Hello friends and visitors of Sumadhura hope you are all doing good.It's Tuesday again and today I am sharing with you 2 recipes that I tried and tasted following the recipes shared by 2 wonderful bloggers.Here the recipes of the day without further delay------------

1) Zucchini Chutney from Creative Sanyukta by Sanyukta.


I followed her recipe as is and it tasted very delicious.Loved the addition of fennel seeds and use of raisins for sweetness in the dish.I did not add cashews but followed the rest of the procedure as is.We all enjoyed this chutney and will definitely make it again.Thank you Sanyukta for sharing this delicious chutney recipe with us.


I followed the recipe as is and it was very delicious.It was very easy to make and tasted very refreshing.We all enjoyed having it.A very nice soup for the hot summer days.Will definitely make again.Thank you Priya for sharing this delicious and healthy soup recipe with us.

1) Zucchini Rice from Priya'sEasy n Tasty Recipes by Priya Suresh.


I am always amazed by the creativity and the ease with which Priya presents her dishes.There are a lot of recipes that I have bookmarked from her blog.

Today I am sharing with you one of those recipes that I bookmarked and tried.I made the Zucchini Rice following her recipe as isI used freshly cooked rice for the dish.It tasted very delicious and we all enjoyed it.Will definitely make it again.Thank you Priya for sharing this recipe with us.

2) Cucumber Pachadi from Dishes from my kitchen by Pavithra.



I followed the recipe as mentioned by Pavithra without making any changes.It tasted very delicious.Adding fried gram dal and coconut to the chutney had made it's taste more unique .We all loved it and will definitely make it again.Thank you Pavithra for sharing this delicious recipe with us.

Tasty and Healthy Juices On Thursdays : Juice Recipe # 20

I am sharing with you a delicious and healthy juice that I tried this week.The juice recipe that I am sharing today is a wonderful combination of 3 delicious fruits that are handy and available most of the time.

Juice Recipe # 20 :
---------------------



We need the following ingredients for making this juice----------------

Red Grapes.................1bunch(big)
Red Apples................3(small)
Oranges.....................3(big)
Ginger........................2 inch

Preparation :
------------------
Rinse the fruits under cold water.First juice the oranges followed by 2 apples followed by bunch of grapes followed by the 3rd apple followed by the piece of ginger.Stir the collected juice in the bowl with a ladle so that the juices blend in and serve the juice immediately.

This yielded 1 large glass and 1 small glass of juice.The juice was brownish-yellow in color.

Note:
---------
1) As always, do check if the ingredients used in the juices are okay for you ,before you make these juices.

2) In a juicer always try to juice the soft fruit followed by hard fruits so that you can get the maxium juice out of the soft fruits.

3) A food that is healthy for one person may or may not be healthy for an other person.Always check with your doctor before you try these raw juices.
