Calico Beans


Calico Beans

1/2 pound hamburger
1/2 pound bacon (cut in small pieces)
1 cup onions (cut fine) or 1 teaspoon onion powder
1/2 cup ketchup
1 teaspoon salt
1 teaspoon mustard
2 teaspoons vinegar
3/4 cup brown sugar
1 can pork and beans (undrained)
1 can lima or butter beans (undrained)
1 can kidney beans (undrained)

Brown hamburger and bacon, add onions and cook. Add all the rest of ingredients. Mix and bake 40-50 minutes at 350 degrees uncovered.

Scalloped Corn


Scalloped Corn

1 can corn
1 egg
1 cup crushed soda crackers
1 T soft butter
Salt and pepper

Bake in shallow baking dish at 375 degrees for 30 minutes.
Serves four.

Rhubarb Jam


Rhubarb Jam

5 cups rhubarb cut fine
3 cups sugar
Boil 15 minutes.
Add one package of Jello (strawberry).

OR

6 cubs rhubarb
4 cups sugar
1 can cherry pie filing
Boil and cook 20 minutes.
Add 3 oz package of Jello (cherry).

Apple Crisp


Apple Crisp

Fill pan 3/4 full of peeled and sliced apples.
Sprinkle on 1 cup of sugar, pinch of salt, and about a half of teaspoon of cinnamon.
Topping:
- 1 cup brown sugar
- 1 1/2 cup flour (or oats)
- 1/2 cup soft butter
Put on and bake 30 minutes at 350 degrees.

DIY Envelope Pillow Covers

I made a ten new pillow covers to go with our new furniture. To help me remember, here's what I did.

For a 20x20" pillow form: 
1.) Cut one piece of fabric 20x44". 44" is typical for the width of fabric, so this is partially where this number comes from. It also ends up being a good amount for the envelope ends to overlap. I ended up using decorator weight fabric which is wider, so I cut my fabric down to size.

2.) Iron the edges of the 20-inch sides. I first ironed over the edges at 3/8" and then a second time at 3/4" (6/8").



3.) Sew a seam to keep the folded edges in place. I used a 5/8" seam allowance.

4.) Put the piece of fabric on a table with the right side up. You'll sew the envelope inside out and then turn it right side out when it's done.


5.) Fold one 20-inch end down 10". Fold the other 20-inch end toward that fold so that there is a distance of 19" from one fold to the other. Even though I used a 20x20" pillow form, it's better to sew them a little smaller so the pillow form fills up the pillow cover. Pin along both raw sides.





6.) Sew the side seams using a 1/2" seam allowance. I usually pull out the pins right before the needle reaches them.


7.) Cut  notches on the four corners to help minimize bulkiness. I also sewed along the raw edges with a zig-zag stitch to help prevent fraying if I end up washing the covers. With my two monkeys, that's pretty likely. You could also serge the raw edges.


7.) Turn right side out and insert the pillow form. TA DA!!!

Rhubarb Bars













Rhubarb Bars

1 cup flour
5 Tbsp. powdered sugar
1/2 cup butter
3 eggs, beaten
1 1/2 cups sugar
1/3 cup flour
3/4 tsp. baking powder
2 cups rhubarb

Mix flour, powdered sugar, and butter. Press in 9x13 inch pan. Bake at 325 degrees for 15 minutes.
Mix remaining ingredients and spread over crust. Bake 30 minutes at 350 degrees.

(You can double the quantities and bake on jelly roll pan.)

Easy Lasagna


Easy Lasagna

1 (8 oz.) pkg. lasagna noodles
1 (32 oz.) jar spaghetti sauce
2 c. cottage cheese
3 c. mozzarella cheese
1/2 c. Parmesan cheese
1 lb. hamburger
(Optional: Few extra dashes of garlic powder and onion powder.)

Brown and drain hamburger. Add jar of spaghetti sauce. Grease a 9x13-inch pan. Pour in 1/3 of the sauce, add a layer of uncooked noodles, a layer of 1 cup cottage cheese and 1 cup mozzarella cheese. Repeat all layers. Combine the last cup of mozzarella cheese and last of the sauce with the Parmesan cheese; pour over the top. Cover with foil and bake for 1 hour at 350 degrees. Remove the foil for the last 15 minutes. Allow to sit for 10 to 15 minutes before serving.
