Taco Soup
I made this tonight. It was super yummy, really easy and I had almost everything on hand (and those few things I didn't I just omitted). I even used beans from my food storage. Go me!
Crock Pot Taco Soup
Recipe #40022 | 2¼ hours | 10 min prep
This soup is quick and easy to prepare and has great flavor. I got it from a family friend.
Ingredients
* 1 (16 ounce) can pinto beans
* 1 (16 ounce) can white beans or kidney beans
* 1 (11 ounce) can niblet corn
* 1 (11 ounce) can Rotel tomatoes & chilies
* 1 (28 ounce) can diced tomatoes
* 1 (4 ounce) can diced green chilies
* 1 (1 1/4 ounce) envelope taco seasoning mix
* 1 (1 ounce) envelope hidden valley ranch dressing mix
* 1 lb shredded chicken, ground beef or any meat
Directions

Cook meat and drain.

Shred if needed.

Add all ingredients to crock pot.

DO NOT DRAIN CANS.

Stir.

Cook on high for 2 hours or low for 4 hours.

Keep on low until serving to keep hot.

Garnish with sour cream, shredded cheese, chopped green onions, or tortilla chips.

Jonas Turns 2 Weeks Old
Wow, two weeks! I love this boy, he is so sweet and despite the late night parties he likes to throw, he's growing on us!

Baby come back...
so my brain is finally returning to it's normal functioning state, which is so nice! in honor of that, and of the new swing i just got, thanks to my sister ande, here's jonas! in his new fave (aka my new fave) place, the swing.

Jonas turns 1 week old
Today is Sunday. Last week we were waiting in the hospital for our little guy to arrive and this week he's snoozing on the couch while I watch a silly sci-fi channel show called ghost hunters. Here's just a few photos I snapped to commemorate his first week of life. Oh and I've included a few of his room too.
A few fun notes about his room. We found the rug at a store called home goods and i love it. The browns and blues were exactly what we'd been looking for. The crib is a cherry color, but we'll probably paint it to match the awesome credenza (dresser) that we found at the DI and re-finished. The changing table is great and tall! My brother in law made it and it's fabulous. Jonathan and I decided on the brown after seeing it on a wall at IKEA and falling in love with it. The lazy boy chair was another amazing thrift find. We got it at a savers store for 35 dollars! It's really new and oh so comfy. The theme in the room is dinosaurs, the artwork is almost ready to go up on the walls. Jon has been painting them and now we just need to finish the framing!
