Baked Oatmeal

This is a yummy breakfast or dinner (oats do a body good!)

I cut the sugar down to 1/4 cup - I used 1/2 and it was WAY to much sugar.

Baked Oatmeal

2 cups uncooked regular or quick-cooking oats (both work)
1/4 cup packed brown sugar
1/3 cup raisins
1/4 cup chopped walnuts or pecans
1 teaspoon baking powder
1 1/2 cups milk or water (Iused milk)
1/2 cup applesauce
2 tablespoons butter
1 large egg, beaten

Combine the first five ingredients in a bowl. Combine the milk, applesauce, butter and egg. Add to oatmeal mixture and pour into a 8-inch square baking dish.

Bake at 375 degrees for 25 minutes. Serve warm and the cool the restand store it in an airtight container in the refrigerator.

Gordon Hinckley - Lessons I Learned as a Boy




I was preparing for Family Home Evening and found this short video from President Hinckley. I can't say how much I love this man. He is one of my favorite prophets. I was able to feel his wonderful spirit and wish him a happy birthday once. A day I will never forget. This lesson he gives brought me joy, tears and lifted my heart so I can become a better person. I recommend everyone to take a peak, it will be the best 4 minutes of your day.

New Moon Movie



I like this logo: it's in line with the first movie logo but does have its own originality. The small new moon below the main title is so cute. We are one step closer to the release of this New Moon movie. November 20, 2009 isn't so far away! We will enjoy The Twilight Saga New Moon movie soon!


You've probably heard of the controversy around the replacement of Taylor Lautner (I had no idea really) by Michael Copon as Jacob Black in the movie New Moon. The change could have make sense: Jacob should be much taller and stronger in New Moon, where his role is getting much more important as a werewolf. But well, most fans were quite upset by the move. And Taylor Lautner has been working hard to get more muscles and fit the job. So Summit Entertainment is finally switching back to Taylor Lautner in the role of Jacob Black the werewolf who is Bella's best friend.
Below some words from Director Chris Weitz:

"[...] I’m very happy to announce that Taylor Lautner will be playing Jacob Black in New Moon and that he’s doing so with the enthusiastic support of Summit Entertainment, the producers, and Stephenie Meyer.The characters in Stephenie’s books go through extraordinary changes of circumstance and also appearance; so it is not surprising that there has been speculation about whether the same actor would portray a character who changes in so many surprising ways throughout the series. But it was my first instinct that Taylor was, is, and should be Jacob, and that the books would be best served by the actor who is emotionally right for the part. I think that fans of Twilight the book and the movie will be surprised by the Jacob Black that Taylor will bring to the screen in New Moon; and I’m looking forward to working with him and the rest of the cast in realizing the film.[...]"

Sick again

So I have been sick again this week - I have no clue why this keeps happening! I exercise, eat healthy (as best as I can) and I still get sick. But this time it is worse! I caught the stomach flu -yuck! Luckily I made chicken soup on Monday right before I got sick and been able to keep my family and me eating healthy. However the 3rd day now, Matthew refuses to eat it AGAIN. But here is my recipe - it was so easy and good. Try it and freeze the left-overs (specially when you really need it).

Chicken Noodle Soup
From Tyler Florence

Makes 6 servings

1 store bought deli roast chicken
2 quarts (4 cups) cold water
2 carrots, washed and sliced into circles
3 celery ribs, roughly chopped
1 small onion
2 garlic cloves, peeled and chopped
4 springs fresh thyme, leaves only (I used dried)

Salt and Pepper
2 cups uncooked noodles (I used whole wheat pasta)
Juice from ½ lemon
4 springs fresh parsley, roughly chopped

Place the first 7 ingredients in a large stockpot and bring to a boil. Reduce and simmer for 20-25 minutes; remove chicken. Shred meat, discarding the skin and bones. Season the broth with salt and pepper to taste; add noodles and chicken. Bring to boil; reduce the heat and simmer until noodles are tender. Add lemon juice and parsley; serve.

Busy Week!


This is one busy week for us. With Matthew's 3rd Birthday and our 5th year Anniversary there is no room for house cleaning or reading (more sad about the reading part). However it has been a great week! John and I went to the Temple and did Sealings and then to our favorite Sushi restaurant - I LOVE SUSHI! I ate until it hurt. Thank you Grandpa Jaggi for driving 8 hours AND celebrating Matthew's Birthday AND our Anniversary AND watching our kids AND taking such good care of them. We LOVE YOU!
*FUN TIP* Every year I take a picture of us on our Anniversary. Sometimes it is a silly picture of us in our pj's or us in front of where we eat/go-something to remember the day. I bought a cute photo album and I put JUST our anniversary pics and info in it. So we now have 5 fun memories of our anniversary. And it will show us how beautifully we age together!

Over 30 and I still get them!


Okay if I find something out that is amazing I like to share. Well, I am 31 and I still get zits! Will they ever go away?! Probably not - but at least I found this--- RareMinerals Blemish Therapy! I put it on at night on my zit and it is usually gone in the morning! If it's a nightmare of a zit it may take 2 days. It doesn't dry out your skin or look like you are trying really hard to cover "something" up. It is a wonder product and only $28! I have had it for 4 months and not even close to running out. You can find it at Ulta. It is amazing - try it and if you don't like it Ulta will refund your money!
