I know it's been awhile since I've updated my blog! I use my IPhone so much now that I don't go onto my computer much. Let me update about Connor's first day playing soccer!
Upon arrival Connor was super shy! Within few minutes one of the teachers encouraged him to play and he finally joined and LOVED it! He giggled, ran, and played with other kids. The kids were aged 4-6. It went fantastic and he is excited for next week!!

Chicken Curry
One night I had dinner at a friend's house. She made this fantastic chicken yellow curry that I feel in love with. I had to ask her what kind of curry she used. It was simply from Quality Foods in a small package. Omgosh! I made it twice so far and I just LOVE it. Whenever Brendan and I pick up a whole chicken from the store for a "lazy" night, we would save the chicken leftovers and use it for curry dinner the next night!
This was the curry paste that I used from Quality Foods. It says "mild" but it's more like "medium" and maybe "hot" for some people. It seems to get more spicy the longer you cook it. Yum!
Weightwatchers Points = 11pt per serving (This dinner made 2 huge servings! I couldn't finish it!)

Vegan Pizza
This vegan pizza was DELICIOUS!!! It was very easy and simple to make.
Layout a pita bread on cookie sheet. Spread 1/4 cup of hummus on the pita bread. Place red onions and zucchini slices on top. Sprinkle 1/4 cup Daiya vegan cheese on top. Pop into the oven for about 15-20 minutes. They were to die for!! You may use your own toppings if you'd like but these were what we had left in the fridge and it turned out great :)

Connor's New Bike!
Here's the proud boy with his brand new bike! We orginially got him a different bike but the training wheels didn't fit :( He was so disappointed and sad when we told him that we had to return the bike and couldn't ride it right away. Daddy went out and got a different one this morning and we all went out for a ride! He caught up pretty quick. Knew what to do, but boy was he ever tired at the end. Haha.
Love it when kids stick their tongue out concentrating so hard on something!! We are going to be getting a good use out of that bike this year!! Can't wait!!

Congratulations Brendan!!
On Tuesday Brendan received an email from a guy that was interested in offering Brendan a job. They met up last night for an interview and he got the job!!
What will Brendan be doing? He will be teaching! A local college is offering a web design / programming program and Brendan will be teaching some of the courses to students. Brendan is very excited about this opportunity because it's very much his kind of job.
What about Brendan's project (game) that he was working on? He will finish it! The teaching position is only currently part-time but it will turn into more hours and regular later this year which works out perfectly for Brendan. Finishing the game may be delayed but he will still be able to work on it. He hopes to release and sell his game by the Fall.
This job will be a very good experience for him and he could work on his projects on the side while he is doing the job that he loves to do!

Strawberry & Banana Crepes
While I was shopping at Thrifty's for ingredients for raspberry chocolate cups, I came across to this crepes and had a great idea of making something with it for Brendan's Valentine's breakfast treat. I gathered crepes....
Some strawberries and bananas with a little olive oil.....
Butter flavored syup for a little sweet added. We can't have dairy but you can add whipping cream or ice cream!
Fry up bananas and strawberries. It only takes 5-10 minutes.
Place the strawberries and bananas on already-made crepes...
Wrap it up and top it up with some syrup (or whipping cream) and TA-DA a very healthy breakfast!
Weight Watchers' point was only THREE for 2 crepe rolls!! Generally, meals usually are about 6-10 average. It was very filling so I was happy!! :D

Raspberry Chocolate Cups
The family that I teach ASL to, invited me for dinner tonight. I was to bring a dessert. I was excited because I'm on weight watchers so I could control what I make then I could have SOME!! For those of you who know about points that goes with weight watchers, these cups are only 2 point EACH! These were easy to make. Chrissie came over and was a big helper. We put 1/2 chocolate at the bottom and then stuffed raspberry in the middle. THEN we topped it off with another 1/2 of chocolate. Very yummy!! We used semi-sweet chocolates but you can use anything! Just melt it in a stainless steel bowl that is resting on a warm pot with some water on the stove and keep on stirring. 64 cups were made in total. LOTS!!! We gave some to Chrissie, Brendan's parents and most of them are for tonight.

Piles of Laundry
Sigh. Laundry with kids is endless. With school, work and family, laundry is the least of my worries. Clothes would just pile up overtime. As most of you all know me, I like to have my house organized. Leaving laundry to pile up annoys me :P Brendan suggested the idea of sharing loads. Of course, I took the offer :) He, now, does the boys' laundry which is at least 2 loads a week. I only have to do 4-5 loads, whereas, it was 7 loads on average. Thanks hunny!

Simple and Healthy
Brendan wanted me to try and make something with chicken broth and noodles. It was quite simple. All I did was add some veggies and that was it. I was planning on adding some tofu but we forgot to get some at the store.
The noodles were very thin. Perfect for soup kind of meal.
Looks delicious? It was quite light but if you want some flavors you can add anything you want such as soy sauce, hot chili sauce, spices, etc.
I added some soy sauce and a bun to go with it. Yum!

Special Delivery
This afternoon I was sitting at my desk doing my homework. Brendan sneaked up with a huge beautiful vase with 12 gerbal daisies. I was speechless and it took me a couple of seconds to absorb that it was for me. I thought it was so pretty and then wondered who it could be from. I knew it wasn't from Brendan because he wouldn't have it delivered when he could go and pick it up himself. There was a note and I read it. "You are loved more than you know. Love Mom" That watered my eyes and put a huge smile on my face. I was feeling tired and a little down this morning and that just made my day. Thanks so much Mom!
