Ok, so the other week while I was at clinicals I had a nurse that made pumkin bars for her whole floor at the hospital! And lucky me got to sneak in on this yummy treat :) She wrote down the recipe for me by memory so I was so worried that they wouldn't turn out good when I made em. But they did!! So here is the recipe:
MIX:
-4 eggs
-1 cup vegetable oil
-1 15oz can of pumpkin
-2 cups of sugar
-1 tsp of vanilla
ADD:
-2 cups flour
- 2 tsps baking powder
-1 tsp salt
-1 tsp baking soda
-2 tsps cinnamon
BAKE:
for 25 min in a jelly roll pan
FROST:
with cream cheese frosting
And you're done! Easy huh? Yeah, so what if there are 2 cups of sugar.... just make sure you don't eat the whole pan yourself!! This does make ALOT so you may want to cut the recipe in half. And sorry that I don't have any fancy pictures of the whole baking process and all but trust me... I'm not very graceful in the kitchen so you don't wanna see any! But I did take a picture of my SUPER SWEET measuring spoons!
I totally forgot that I had these magnetic measuring spoons so this was my first time using them and they are totally handy cuz my kitchen is usually a mess when I try to cook. Jamie made fun of me for taking this picture but I thought it was pretty cool. Well now I am an official cheesy blogger lady because I just posted a recipe, but oh well! It's good, you should try it!!
