Was trying to find the best way to keep all my home cook recipe n i think this is the best way.
Beef Tripe with white pepper soup
- Bought Beef Tripe from Studfield asian market. 7.99 per kg. paid around 4 buck for that
- Start boiling two pots of water, one with Ikan Bilis (dried anchovies) stock with radish; while the other pot is to blanch the tripe before putting into the soup stock
- Blanch pot adds
1. one spoon of balsamic vineger
2. Salt
3. wine
4. beef tripe
once the water starts boiling, turn off the fire and let it simmer for 3-5mins
pour away the water and put the tripe to the stock soup.
- Stock soup adds
1. radish
2. 2 spoons of black pepper
3. 2 spoons of white pepper or grounded pepper to taste
4. a bit of salt for taste
- boil for another 20mins and put in the thermal cooker till serving.

Time flies
it has been few months since my last update on this blog. Time really flies.
we had our family visited us for the past few months and best of all we had a proper CNY dinner this year!
then we had a out door movie time for the last time before end of summer at Agilent compound

Tang Hun Soy Chicken Recepi
as promised, I need to upload this to our good friend in US :)
soak the tang hun 1/3 of the amount for normal meal
fresh mushroom
preferably wings/drumstick/thigh so that it wont be too dry
garlic and onion. up to taste
bell pepper and carrot. the lady's finger for something else :P
slit the wing to half but not totally cut to half. this is to make sure it's cooked faster
marinate it in Soy souce, 5 spices, tapioca floor, sesame oil, white pepper, mirin and salt to taste. Dont need to be too salty as there's going to have gravy later
shredded bell pepper, onions and carrot
heat oil, pan fry the chicken to 70% cook. charred outside but still soft inside
put in water, enough to cover 3/4 of the chicken and put in the tang hun
bring it to boild and simmer to reduce the total gravy to half or 1/3 of the original amount. Tang hun will coak up the gravy very fast after this.
put in mushroom, onions, garlic and bell pepper.Cook for another 1min and off the fire.
and there you go... :) mouth watering tang hun chicken :D

Our Story .... a good long way
part 09 - ???
Thank God for His faithfulness that I got a job after a gruelling 8 months of joblessness. Through it all, i've learned these few things which would like to share with the readers:
1. Losing a job is NOT the end of the world, but losing hope is. We had learned over the months that hope is what keep us going in knowing that everything is in God's hands. We know that He's faithful and never will let us alone in the situation. God has been proving Himself real to us in many situation, both good and bad time.
2. We have gone through a period of dryness and we finally understand what's really to be in need. Now we know what is the feeling of desperation for God; The feeling of deep desire for change; The feeling of receiving blessing from friends; The feeling of when someone just came by and encourage us... We had a total change of perspective on our Christian faith; How God has encouraged us; How God provided the food on our table day in and day out.
3. We know the happy ending is the one that people would like to know and enjoy reading. We tend to want to know the positive outcome of the story and fast forward the process of going through in the situation. We WERE in that process last year when we gone through the process of breaking, molding, hope, desperation ... When we look back now, we learned to be contented with the little things in life, we learned to walk step by step with hope and faith, we learned to see beyond our situation and continue to serve and give, we learned to be patient in waiting for great things to come, we learned to trust God in good and bad situation...
4. Losing a job doesn't make you a lesser of a person. You are who you are, it's not what you do
I used to drive by Melbourne Agilent's office occasionally as it's on the way to asean kampung in Melbourne where we'll normally go to get our asean food fix. Every time I drove past it, I just pray and claim in by faith to get back into this company. Some time I just joke with Audrey that, "it's so near but yet so far". But as we look back on what had happened last year, we are glad that we had the opportunity to go thru that and most of all, we experienced God's faithfulness in our life.
Hope this experience has encouraged you in some way :)

Our Story 06-08
Part 06 : Winter ver2
Winter was not too cold, nothing lower than -1C, but it was wet where we didn't get enough of sun light everyday. I was asked by GP to take Vitamin D as I was diagnose with Vit D deficiency, which was a surprise to me! We didn't have this problem back in Malaysia and never heard of such thing!
So I was loading up myself with Vitamin D supplements and feel a bit better overall, not so depressed, through the winter. Whenever there's sun shine, we'll try to go out and stay under the sun, a bit like solar panel :)
I was trying to set up a website using WIX and FB for the music school that I plan to start, and the name for it is AutumnGreen, which I thought it's suitable to our situation at that time, where we still have hope in the midst of trouble. Green - surviving, like grass in the autumn/winter. I even ordered some name card for this class to be distributed to the surrounding neighbours.
Out of those months, two students turned out, one for guitar and one for keyboard. The guitar class was short lived as we only manage to go through 3 classes and the keyboard class was a bit better, which lasted around 6 classes.
The website design and music class marketing was on hold after September as I was involved in an off campus training course on Certificate IV in Training and Assessment (TAE). Certificate IV is something lower than diploma level and this cert is recognized by the workplace here in Australia. Having this additional certificate will eventually put some plus points to the resume.
The whole course was not that hard, just that it's routine to read and answers, get involve in group meeting ... blah blah blah....
Part 07 : My little kiddos
We celebrated her birthday here in Melbourne and few months after that she's enrolled to a local kinder. I had the privilege to fetch her to kinder 4 days in a week and when I looked back now, I'm glad that I was there during her kinder time in school to send her off and fetch her back. Get to talk to the teacher about her progress in kinder, getting along with friends, eating her own lunch, borrow books from library, talk about her friends, had a talent show night for Christmas.... It's really a privilege for me....
As for our little bear, he started walking right after we got here. I had the privilege to take care of them during the jobless period and see how my boy growing up. There were time that they drove me crazy and there were time they brought joy and smile to me at home. He came with not much hair, but now, I'm proud of the amount of hair that he has :)
We tried to have a set of routine for the kids such as wake up, brush teeth, dress up, send to school, play at home, learn something, go to the park, short nap, do home work (for myself), cook for the kids, cook for dinner, fetch the kids, bring them out walking, let them play at the backyard... so many things to do in so limited time. Many time the kids beat me in the amount of energy they have especially Shanna. She started not taking afternoon nap, and that's something hard for me, coz normally I'll be doing my own personal things during her afternoon nap and now I'll need to prepare something for her to keep her occupied.
So we came out with something that she enjoyed playing, such as snap using uno cards, building blocks, count the cards number in mandarin, reading, coloring in the backyard....
Then the kids get a treat on Friday! afternoon they'll get to watch Mickey mouse club house cartoon while i was preparing their lunch and watch planet earth documentary while I was preparing the dinner.
Part 08 : 6 months probation
There's a 6 months probation period for most of the new employment here and they really take it seriously as compared to what we have in penang. Thank God that Audrey gone through the first 6 months without problem and she was converted to permanent workforce. Through out the six months period, we had food catering for ourself, 3 days a week so to off load myself from having to cook every meals every day. The food was all right, cooked by singaporean cook. After a while, we hit the max variation of choice and we had a lot of repeat choice by the end of the 6 months. The food is not bad, something similar to our home cook food, only with additional ajinomoto.
By the end of Oct, there was an opening in the company where Audrey was working which was suitable to my experience as test engineer in manufacturing field. I applied for that job and got a face to face interview when my family was here with us in Melbourne. Finally, there's a change in my situation after a long 8 months of waiting for a job. My mom just came on time and she stayed up late just to pray for me when she knew that I was going for the interview the next day.

Our Story 03-05
Part 03 - The dry season
After loosing the job on 20-03-2013, both me and Audrey started to look for job aggressively. I was helping out my Penang friend with some programming project at that time and thank God for him that I was paid enough to go through that few months of jobless period. I started to feel the real situation in Australian job market where electronics-telecommunication engineering was one of the kind niche job. While looking through the head hunters website such as seek.com.au, enginuitypeople.com.au, I found out that electronics engineering was not really the best job in Melbourne. SO I tried to venture to another field, Software designer and tester. After sending out more than 20 customized resume to various companies and head hunters, I felt more disappointed as none of the resume yields any interview, all being rejected with the main reason "not qualified".
So instead of just sitting at home, I was able to find a temporary job to deliver pamphlet for supermarkets and shopping mall. I was assigned to cover an area of 3KM radius, which translate to around 10KM of walking over high and low terrain. I was able to make on average of AUD 20 per trip and normally spend around 2 hours of walking and 2 hours of packing the pamphlets. The biggest pile of pamphlets that I'd packed was during the mothers' day sales, it's around 31 pieces of pamphlets per household! I did this for around 3 months and able to earn around 300 bucks all in all. This was able to cover some of our monthly expenditure on food.
Then also, I started to promote myself in the on-line local music school by teaching keyboard and guitar at home. I was thinking of changing my field totally from engineering to performing art at that time.
Part 04 : A job opportunity
Somewhere around April time line, Audrey get to know a Malaysian who was working in a local company going to leave his job soon through some network from back home to here. We were reminded again many time by the locals to have a wide network and try to build it by engaging activities with the locals as many of the jobs were offered to those in the network. So Audrey went for the interview as project manager and got the job offer right after that.
I became full time dad at home with the kids. By then, Ian and Shanna were in childcare once a week so that they have some play time and chance to mingle with the local kids and a off day for myself to do some job hunting, shopping time, cleaning the house....
I wouldn't say that it's a easy job to take care of the kids at home full time, but it's a opportunity for me to see them grow and learn to be patience and control my temper. At time, both kids are driving me crazy and most of the time they brought joy and laughter to us.
Right after Audrey started working, I need cook for two meals, be the teacher at home, be the joker to entertain them, plan out something for them so that they wont be bored at home, brought them to local library to listen to stories and borrow books (as weekly event), send Shanna to kinder, fetch her to and fro, be the master chef at home with all sorts of "great" ideas on what to cook everyday. Audrey was supportive to me during those months and willing to take care of the kids after her work in the evening so that I can have some time for myself and to release me from the kids. I really respect our moms on how they take care of us everyday.

One day, we just prayed for the place that we were staying and break the cycle of sickness in the house and by God's grace, the sickness cycle in the house was broken!

Long story - our story
On the eve of 20th Feb 2013 we boarded our plane from KLIA in the afternoon after having a super expensive Mc-D at the airport and headed off to Singapore to catch the overnight flight to Melbourne.
Changi Air Port
The kids were having fun running about the airport with many things to see and explore. Shanna went to the butterflies park at T3 and Ian was having his beauty sleep. Both of us were a bit sad knowing that it might be another long while before we can go back to Malaysia and it'll be another long while before we transit in Changi airport.
We boarded the A380 Airbus and it was a surprise to us. After the whole long 8 hours flight with the sleepy kids and adult, we arrived Melbourne in the morning.
Melbourne - part 01
We arrived the airport and our good friend fetched us back to our rented place at Ringwood East. We were paying around Aud 370 per week for the unit with 3 bedrooms + 1 studies + 2 bathrooms and 1 single toilet. Double storey unit with reasonable sized backyard, living room and dinning area; 3 nicely carpeted rooms (not sure about the cleanliness or it though).
Brought the whole family around the area after settling down for a day, started buying groceries from Woolies and Coles from the near by supermarket. Nearest shopping mall was Eastland, with plenty of parking and easy to drive road. First week was just exploring the surrounding area, unpacking and meeting up with local friends.
Part 02 - The great fall ....
I was offered a job in one of the local company, Sensorplex, run by ex Malaysian who stayed in Melbourne > 30years. I reported to work a week after touching down in Melbourne and worked as application engineer to do software and hardware setup in automation field. Basically this company deliver safety system in a fully automated environment such as food packaging floor. Started working after a week in Melbourne. First day wasn't too bad, had lunch provided by the employer for three days a week, meat pies (4-20 they call it here), roast chicken, self made sandwich, bacon...etc not everything in a day.
Started to study about the system, ABB safety, ASi standard and software on VB. Net. Pressure started to be piling up on my shoulder to perform as soon as i can without telling me what were the expectations. One particular incident was that I need to know what ASi (Asynchronous Switch Interface) stand for instead of what it does, which apparently it's more important to know the word than what it does technically to the director of the company.
Things went on from there and started to help my mentor to create some sub program to help him in his job. I was being asked to do some hands-on to assemble a safety system from scratch, which was part of my job spec. So when I went to the production floor, I was shown the way to drill holes through a stainless steel box with a hand-drill and without any safety gear such as goggle, gloves or ear plug. After 3 weeks of surviving mode in Sensorplex, the director drop a bombshell asking me to leave the company with 2 weeks of compensation with this reason "Don't think you are fit for this job".
I didn't question him back much about what did he mean by i'm not fit without telling me upfront what were his expectations were. In some way i was glad, but in some way i was disappointed as I had not been made redundant in the whole of my career life. At that time, I remember what Job said in the Bible (Job 1:21) "The LORD gave and the LORD has taken away; may the name of the LORD be praised" God gave me that job and In His will, it's taken away and I'm glad that it happened when i look back now
