hello kitty floral wreath crown cake


It's my birthday month! Hooray!

One of my favorite things about my birthday month is all the coupons that I get from all of my favorite stores! And of course, celebrating with my friends and family! But also one of my favorite things is that I get to make myself a cake, and I try to think of a different Hello Kitty design every year. Last year when it was time to make my birthday cake, I was really into make floral wreath cakes, so I thought it would be really cool to make a Hello Kitty floral wreath cake, where the wreath in essense becomes a crown wreath for Hello Kitty!


I love coffee chiffon cake, and I love Neapolitan cakes, so for the cake insides I decided to do a Neapolitan combination of coffee (instead of chocolate), vanilla, and strawberry chiffon cakes. And then I filled each layer with freshly whipped cream.




For the frosting, I chose to do a Swiss Meringue buttercream (you can find the recipe in my book, The Hello Kitty Baking Book!) because I wanted something light and not too sweet, and I didn't want it to melt too quickly like a whipped cream frosting does.


After covering the top and sides of the cake with a quick crumb coat, letting it chill in the fridge for 30 minutes, and then doing a final smooth coat, it was ready to decorate!


I started by piping black frosting for the eyes and the whiskers, using a disposable pastry bag fitted with a small round tip, and then using a similar tip to pipe the nose with yellow frosting.


For the ears I attached fondant shapes that I had cut out ahead of time (you'll need to let it air dry for at least a day or two, so that the fondant is no longer floppy and will stand up on it's own). Since I knew I would be adding buttercream flowers, I piped a ring of whipped cream along the perimeter of the top of the cake, which helped to hold up the ears as well.


Then I added my buttercream flowers, which I had piped ahead of time and let harden in the freezer. (You can see more on this technique here). I chose to do a deep pink and white flowers, partly to match the inside of the cake, and partly because I like the color combo!


To finish it off, I piped dark green buttercream leaves (using this leaf tip) to fill in the gaps in between the flowers, and then it was done!



Doesn't Hello Kitty look so pretty with a floral wreath crown?!







And now, for the inside of the cake.


The cake was soft and airy and light, with just the perfect amount of sweetness.

hello kitty unicorn cake


For the past several years, when it's my birthday I make myself a cake! And it's always a Hello Kitty cake of some shape or form! This year I was inspired by unicorns, thanks to my daughter Melodie. :) She has a fascination and love of unicorns, and it has rekindled my childhood love of unicorns as well! For her birthday last year I made her a unicorn cake, complete with handmade fondant unicorn horn, and so when my birthday came around I thought it would be fun to give Hello Kitty with a unicorn horn too!


This year I wanted something light and fruity, so I settled vanilla chiffon cake, filled with lemon whipped cream and fresh blueberries.



Once all four 6-inch cake layers were filled and assembled, I covered the top and sides with freshly whipped cream, and smoothed it out with an offset spatula.


After adding a beaded border around the bottom of the cake, I simply added black eyes and whiskers and a yellow nose.



For Hello Kitty's ears I used fondant, which I rolled out to 1/8 inch thick and then used a paring knife to cut out triangles for her ears. Then I tinted a bit of fondant with red food coloring, and rolled it out as well, using a bow-shaped cookie cutter to get the perfect bow shape. Finally I finished it off by using an edible food marker to outline and add details to the bow.


And finally, the unicorn horn! (You can click here to see how I made this).


Gah!!! It makes me so happy!!! In my world, you can't go wrong with Hello Kitty and unicorns! :)


My mom invited us over and cooked up an amazing birthday meal for me! (My favorite was the chinese stuffed jalapeno peppers in the middle picture!)

hello kitty floral wreath cake


Every year for my birthday, I make myself a Hello Kitty cake of some shape or form. And this past year was no exception! At the time (this was back in April), I was so inspired by I Am Baker's wreath cake, that I knew I wanted to make it, but with little piped Hello Kitty's added to the mix!

I was in a strawberries and cream mood, but I wanted it to be really light, so I made a chiffon cake instead of my regular vanilla cake. Since I've found chiffon cake to be tricky to slice, I divided the batter into three 8-inch round pans to give me three layers of cake (instead of baking up one big cake and then slicing it into three layers).


Once the cake was baked and cooled, I filled each layer with freshly whipped cream and sliced strawberries.


With a bit more whipped cream on top of the strawberries, to seal them in.



After the last cake layer was stacked, I covered the top and sides of the cake with more freshly whipped cream, and smoothed it with an offset spatula.


As I Am Baker mentions in her wreath cake tutorial, you can pipe a ring of frosting on top of the cake to give the wreath a bit of a "lift" above the rest of the top of the cake. So I dutifully followed her instructions!


Then I began to pipe my "flowers", using colored buttercream and various sizes of open star tips. (Note that I whipped up a separate batch of buttercream, just for the flowers!)


I added more and more piping in other colors using other star tips...


... until I was happy with my wreath.


I could have left it just like this, because it was already so cute! But, I needed me some Hello Kitty!!!


So I piped my Hello Kitty faces with whipped cream, using a large round tip for the face, and a leaf tip for the ears. (See more on how I pipe my Hello Kitty faces! There is also a quick tutorial in my book!)


I used a small round tip to pipe black eyes and whiskers, and a little yellow nose. And for the final touch, I added heart confetti sprinkles to form the bow.
