Lemon Meringue Pie

It is around 5:30 pm now-and my pie is out of the oven.

Recently I started using this larger glass pie pan I like it better. I added extra whites to make sure I had enough. For the crust I ground up raw organic english walnuts and gluten free graham crackers. Added the butter and a little sugar.

Once totally cooled I will store in the refrigerator tonight-and we may just have a slice for breakfast-smiles

Good morning-a little update

 Good morning-Weekend.

Hi Friends, Just popping in really quick to say hello.  Tomorrow-Sunday- friends from Wisconsin will be driving down visiting for several days. Rob is coming with a friend (we know Rich too) to go fishing and they are bringing Rich's brand new boat. Seems like a long drive (600 miles or so) to trailer a boat down when Larry has one. Smiles    Soooo I will be busy cooking up meals etc and won't be around much or for T this coming week.

We did finally get a little rain, just enough so I didn't need to water the perennials for a couple days. We are headed towards the 90's though starting today and warmer at  night too-so will miss those cool mornings to start off the day.

I am off to finish cleaning the house. Yesterday I went food shopping and ugh the dentist-I had a very deep filling between two crowns that needed fixed-I am still in pain from that, but thankfully I was able to get in right a way.

Have a great weekend and new week-we will be watching the race boats on the lake-that came to play this weekend.

Our 41st wedding anniversary is this coming Monday, so I made one of Larry's favorites-from scratch lemon meringue pie-one of the very few things I bake with sugar still

and a pretty pre-sunrise this morning

Another Surprise & Lemon Meringue Pie

I did make us our favorite lemon meringue pie a couple days ago. There is one piece left. We did share with a friend yesterday too.

This juicer is one of my first hand made pottery finds back in the early '70s I have always loved using this. I also used that tool in the back for the lemon peel

The ingredients-egg whites, egg yolks, lemon juice, lemon peel cornstarch and the water and sugar was on the stove

I made a ground pecans (homegrown from Arkansas) and gluten free graham cracker crust

I haven't been posting as much so I think I forgot to share a pretty card from Deb, which looks pretty on the mantel

A dear friend messaged me I had a surprise package coming in the mail-Wow this was a total surprise-a bundle of hand dyed fabrics and hand dyed threads. all different sizes and textures of cloth-Loving it.  Some of these may find their way into my little sashiko bags that I have not started as of yet.

This pretty piece was on the bottom

Thank you so much dear friend. (I didn't get permission yet to share the name of who I am thinking she would rather be incognito-smiles)

I have always enjoyed caramel apples during the fall season, I used to make my own. Now I do enjoy it the "senior way" haha  I made up a bowl last night. This is one large apple sliced thin, with sprinkled pecans, and drizzled on top warmed caramel sauce.

Happy Friday and Weekend.  I will be  making up homemade pizzas tomorrow and inviting the couple over that loved the pizzas I made awhile ago

Lemon Meringue Pie--Out of the Oven

I haven't made a lemon meringue pie in quite awhile, although it is one of our favorites.

I make it from scratch from a very old Farm Journal Cookbook that I have had for over 50 years at least.

Just came out of the oven. Sometimes I get the meringue allot higher but this still looks nice. Larry will love it

A Sunny Day Today

   Good Afternoon everyone,

A lovely day here at the lake-finally. Still very cool in the evenings but today it is warming up to the mid 60's-a heat wave haha.  The nicest thing is full sunshine today-which has been missing.

I decided to make a lemon meringue pie this morning-from scratch (as always) I had the lemons in the frig. I just took it out of the oven moments ago.  This is one of the very few desserts that I use sugar and not a keto sweetener. I use an organic sugar in the filling and regular sugar (actually the hummingbirds sugar haha) for the meringue I made a thin almond meal and almond flour crust and with the melted butter added about teaspoon of lemon extract.

I really love baking this pie in my dutch oven outdoors over and under coals but I am just not set up yet-what I loved about baking this pie outdoors is that the  meringue sticks to the filling and does not slide off, it also does not seep-or get watery while cooling-which always bugs me.

We have been waiting for the sewer project to finish so we know where they are digging and putting things.  They have not been back since they did the neighbors last week. Neighbors on both sides of us this week came out to check on their properties. Both had extensive damages to their docks do to the iced over lake last winter, and the one neighbor came over not happy at all that the sewer people cracked his well. Perhaps that is why they have not been out again this week. I would be very very upset if they do that to ours.

Those of you that might find an interest in trying out weaving and if you are on Facebook there are some really really good groups over there.  I especially enjoy seeing and reading about all the clothing being made on the saori weaving groups. Most of the weavers there are using small table looms like a rigid heddle loom.

saori weaving-https://www.facebook.com/groups/saoriweaving

sewing for weavers is really good too  https://www.facebook.com/groups/1000132110059960

and if you care to hunt for weaving groups in general- there are groups for rigid heddle, 4 shaft looms, beginners and more

I limit my time spent on Facebook greatly now--but I do enjoy their groups-they have really good groups on almost any subject of interest.

Hoping you all are enjoying a sunny day as well.

Thread Finally Arrived and Lemon Meringue Pie

I was happy happy to finally to see the thread in my mailbox for the flannel quilt

I thought I came pretty close with the color having to choose colors online. I wanted the color to blend in a bit for the backing, and not be to dark to use on the blocks with white backgrounds.

I also got the needles in last Saturday. I have allot of needles in my stash, many I picked up at garage sales or resale shops but I didn't have quite the right ones for this project or for wool applique. These are Sue Spargo's smaller collection of needles  and hoping one of the chenilles will work for this quilt.

I have not made us a from scratch lemon meringue pie since we moved to the lake house. I really like baking this in my dutch ovens outdoors over a fire but haven't got set up for that yet here.   For some reason the meringue did not want to get super stiff like it should but I think it will still be good. I baked a ground almond crust.

Pie for Friday

I have had a taste for a slice of lemon  meringue pie-so I made one the other day-from scratch of course.
I have used a recipe that was a blue ribbon winner from a Farm Journal cookbook for over 30 years now.  I don't know if these cookbooks are still being printed but they have the best recipes from farm girl cooks. I still have several of the books.
I used ground almonds-butter-and a non sugar sweetener for the crust
I did cut some of the sugar in the filling by using splenda for part of the sugar.

Perfect for an early evening treat-as we eat one main meal now a day around 2 in the afternoon

Happy Friday
