Tulip Festival



***Sorry for so many posts lately***, but I saw this today and left a message for mom and dad to go see this tomorrow while they are still in bloom. They were absolutely gorgeous and worth the money. It was $10 for adults and $6 for kids. There is a buy one get one free in the entertainment book that helps. There was even a point where I looked up and saw tulips and windmills and thought to myself, "This is probably as close to Holland as I will ever get."

I LOVE ICE CREAM!

I just commented on Angela's ice cream post and mentioned this great dessert we had Sunday. It is Molten Lava Cake made in muffin tins...they don't rise much so you can fill it almost to the top. We used semi-sweet chocolate chips in place of the bittersweet chocolate. And it is super easy and fast! DELICIOUS!!!
Serves 6
4 tablespoons unsalted butter, room temperature, plus more for muffin tins
1/3 cup granulated sugar, plus more for muffin tins
3 large eggs
1/3 cup all-purpose flour
1/4 teaspoon salt
8 ounces bittersweet chocolate, melted
Confectioners' sugar, for dusting
Whipped Cream , for serving
Directions
Preheat oven to 400 degrees. Generously butter 6 cups of a standard muffin tin. Dust with granulated sugar, and tap out excess. Set aside.
In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and granulated sugar until fluffy. Add eggs one at a time, beating well after each addition. With the mixer on low speed, beat in flour and salt until just combined. Beat in chocolate until just combined. Divide batter evenly among prepared muffin cups.
Place muffin tin on a baking sheet; bake just until tops of the cakes no longer jiggle when the pan is lightly shaken, 8 to 10 minutes. Remove from oven; let stand 10 minutes.
To serve, turn out cakes, and place on serving plates, bottom sides up. Dust with confectioners' sugar, and serve with whipped cream, if desired. (We served with ice cream)

I obviously should have given a little more notice with the Free Chicken post. Ice Cream is a little more my style so here's a day to prepare. Tomorrow you can find my girls and I at the local Baskin Robbins. It's 31 cent cone night. The closest one here is offering scoops from 6pm-9pm. It's happening all over the country so go and enjoy! Nutty Coconut here we come!

Azalea Season



The weather in North Carolina has become beautiful! We have been thoroughly enjoying Azalea season. These plants are beautiful right now and it almost makes me wish we had planted some, but they are ubiquitous so we can enjoy them everywhere. The dogwoods also bloomed and now everything is green and springy. The weather is more summery though ~90's! Yesterday I decided to enjoy the sunshine and go running...it must have been a long winter with one too many comfort foods because I thought I was going to die...and I don't think it was heat related. Speaking of comfort food...if you want a good laugh you should go onto the NPR website and listen to Wait Wait Don't Tell Me with Paula Dean two weeks ago...she talks about this hamburger she invented that is a patty between two Krispy Creme glazed doughnuts. Delicious! We love you guys...I love to see posts.

Winner, Winner Chicken Dinner!


I have to admit I have eaten more KFC in the last 8 months than ever in my life. (No, it has nothing to do with the fact that I'm 8 months pregnant.) Jed took a role in KFC after working with the holding company (YUM! Brands) for a few years. And I feel the need to share some good chicken news. KFC is offering FREE chicken today. I know you have all been anxiously waiting to try KFC's latest and greatest. Well, whether you have been waiting or not today is the day to try it. Go to your local KFC and try their new Grilled Chicken. It's good, really, and they will give it to you FREE all day long. I tried it, it works! Everyone gets a free piece, even my girls can't get enough. Let us know what you think!

Blessings


Hey this was Easter Sunday at mom and dads right after the baby blessing for our little man. Steve gave him a great blessing and the spirit reaffirmed to my heart what a wonderful little boy we've been blessed with. Look how cute he is. He is already wearing 6 month clothes. Mom said he is growing like hers did. We were all big and fast growing apparently. Come to think of it I was always in the back row for school pictures up until 7th grade (when we didn't do school pics anymore.......I guess). Ha-chuckle, chuckle! Look how the Hills all turned up.... healthy, happily fed from one of the best cooks, and darn good looking too. I'm proud to call him mine.

Happy Easter!






We had a great Easter! We loved being able to see Henry be blessed (great job Steve :)) and have dinner at mom and dad's house after. The kids had a great time hunting for Easter eggs.

Sydney's Birthday



We had a party at Color Me Mine for Sydney's birthday. Everyone had a great time. I can't believe she is nine years old!
