Grandma Engel


Lexen got to meet his Great Grandma Engel today for the first time. She has been living in Arizona, but God brought her home to Colorado. She is excited to see everyone again and meet all of the new great grand babies. It’s a blessing to have her back.

10 Months!

Our little man is 10 months old! We are having such a blast with him! He loves climbing over everything, but mostly the dog. Bella does great with him, if she gets tired of him crawling all over her she heads to bed - where she’s safe. :)

Lexen loves to eat – he’s like his dad with two hollow legs. He is now eating green beans, carrots, squash, and sweet potatoes. Each week we try something new. We have a few things such as broccoli, peas and asparagus in the freezer that didn’t go over too well yet. We’ll try them again in a few weeks.

Lexen says daddy/dada (still), all done, and yes. It’s very cute. He’s still holding off on the mom thing, but he’s getting closer. :)

We are amazed how much he understands and all of the commands he can follow such as; get your ball, get your book, go get in the bath, don’t touch …

He’s pulling himself to his feet now, so he’ll be walking in no time. Oh boy! He also has 4 teeth in and 3 on the way. It’s crazy how many things he learns in just a few short weeks!

Keep it Simple

Some people think how we eat is complicated so let me break it down…

•We stick with fresh foods whenever possible and eating leans and greens. This is lean meats and green veggies (75% of the plate should be green).

•When I first look at a food label I see if it’s:

1. Certified Organic (with the symbol)
2. Gluten Free
3. If it's made in a factory that process gluten (almost 100% chance of cross-contamination)
4. Dairy Free

•Stay hydrated – WATER, WATER, WATER. Minimally we need to drink ½ our body weight in ounces of water daily (coffee and teas don’t count). Of course if you’re exercising or doing other physical activity you’ll need more.

We avoid:

Peanuts and Peanut Butter – They are a pro-inflammatory food. Meaning it does not support your body to heal and repair at its full potential.

Bananas – They are high on the Glycemic Index. Meaning they immediately spike your blood sugar. We don’t want to cause our blood sugar to do peaks and valleys we want to keep it balanced to avoid becoming diabetic (you can do this by eating many smaller meals throughout the day and always carrying along a snack).

Genetically Modified Foods – Foods aren’t meant to be grown in a lab, sorry that’s not how God designed things.

Sugar – Any food that is high in sugar – it’s just not necessary and causes a wide variety of problems/diseases in the body and blood. It can be listed under many names: corn syrup, dextrose, fructose, golden syrup, maltose, sorghum syrup and sucrose, just to name a few.

Eating potatoes, carrots, pasta, rice, corn, soup and other starchy foods/veggies in the evening. This is because these are power foods; we don’t need power foods when we’re heading to bed. We need foods that are going to promote healing and repair while we are in dream land.

Fruit – It’s good in moderation; we have 3-4 servings per week (in the summer we eat a bit more). We also avoid eating fruit and meat at the same time as it causes damage to the gut.

See how easy that is. So please don’t be scared when we come over for dinner or to visit, just keep it simple and everything will be great! So what time is dinner? ;o)

Working Vacation


We just got back from a week in Mexico. Lexen did great on the plane. Unfortunately, the weather wasn’t all that great - mostly windy and chilly. We had a few bumps on the trip, but overall we had a nice time.

The last 2 days we were there the weather was absolutely beautiful - we all got some sun! I was finally able to take Lexen down to the beach and let him explore. He ate more than his share of sand/shells and kicked his feet in the ocean. Later that day he went for his first swim in the swimming pool and had a blast. Oh yes, and he got his 2 top teeth in the day before we flew home.

After a long days of working, Shan and I were able to spend the evenings together. I can’t believe how fast a week can go by… I think next year we’ll plan to stay for 2 weeks! We sure appreciate the Pettibon’s friendship and hospitality. Until next year…
