peanut butter crackers

Well...I made my crackers.  Addicted?  Yes.  I have oodles of cracker recipes just waiting to be tried out.  The first one was very yummy.  And if you spread it with your fave jam....all the better!  These recipes are so versatile as far as adding a few little extra ingredients (I added ground flax seed to this one to give it just a little extra healthy kick).  I am so looking forward to experimenting with the other recipes.  These are a great healthy snack for everyone...especially the kids. 

























Peanut Butter Crackers

1 cup all purpose flour (I used whole wheat)
2 tbsp canola oil
2 tbsp peanut butter (any nut butter would be great!)
1/4 to 1/2 cups of milk

Combine flour, oil, and peanut butter in a large bowl.  A spatula works really well to blend the ingredients.  Gradually add the milk until a soft dough forms.  Knead several minutes and roll out on a lightly floured surface to approx. 1/8" thick.  Cut into desired shapes and place on a lightly oiled baking sheet.  Prick with a fork.  Bake at 325 degrees for 15-20 minutes or until lightly browned.  Cool. Enjoy!
*I cut mine into basic "crackers" but you could use fun cookie cutters.
These are really good with jam, cream cheese, or nut butters.

good things grow...

....in Ontario!
Oh that statement is so very true.  What a fantastic mini-vacation that Maelle and I had.  Warm weather, lush trees, colourful blooms, family and friends, relaxing outdoors and enjoying the sunshine.  Now that's what I call a fun holiday.  We spent six jam-packed days in Ontario this past week and boy did we have fun.  Lots of day trips, lots of visiting, lots of eating, and lots of fun.  I even got a surprise visit to a spa for a massage and a "new do"!  Thanks Lori and John!  That was such a lovely treat.   I hit the fabric shops, Maelle mastered her UNO game, we shopped for pretty dresses, and we ate almost every meal outside.  Perfection.  
Here's a quick look at some of the highlights of this past week. 

Grandpa gets a lesson on how to play hopscotch.

The Children's Museum in London was one of my most favourite outings that we had.  Talk about a fantastic place!  From venturing to outer space in the Space Shuttle, learning about stars and constellations in a mini planetarium, tooting around "My Town" in a plasma car on a makeshift roadway, digging for dinosaurs and exploring caves, playing in the sandbox in "Jellyfish Junction", and learning all about agriculture and farming, this is one fantastic museum for any age.  Everything is hands on as kids and adults alike learn from experience.  Wow.  I wish we had something like this out west.


Now, I am sure that you all know I am a huge fan of outdoor markets.  And this one did not disappoint.  On what was the hottest day of the trip, we made the journey out to St. Jacobs to take in Saturday's outdoor market.  My goodness the produce!  Not to mention all of the fresh flowers, the sound of live music around every corner, freshly baked bread and treats from the local Mennonite community, golden jars of pure maple syrup, and the smell of food cooking throughout the market.  The buzz of this market was incredible! 

We took a break from the heat and ventured into the outlet mall just across the road from the market.  The destination....the Lego store and some well deserved ice cream.  Maelle had fun playing in the tubs of Lego at the play stations, and racing cars against the boys!  I came home totally inspired to get a track built for the kids so they too can set up a few races of their own. 
Sunday was spent in Toronto where Maelle was lucky enough to hang out with my cousin's little girl, Sarah, (thank you Tracy and everyone for showing Maelle such a fun time!) and I spent some time with Lori and John enjoying home made apple fritters, lattes, the spa, lunch...oh and our "business" meeting, and wandering the shops and boutiques in The Beaches.   Despite a rainy start, the day ended in glorious sunshine.
Our holiday Monday was spent at Auntie Heather and Uncle Ian's house where we had a fantastic lunch with Grandma and Grandpa Snider.  But first, Maelle and I introduced Auntie Heather to one of our favourite outdoor activities...geocaching!  Now even though we had to hunker down during a quick rain shower, we still ended up three for three and I think we have created a new fan of this activity! 

But as the old saying goes, all good things must come to an end.  And that end for us was on Tuesday.  So after one more quick trip to the fabric store we boarded our plane and headed home to gray skies and oodles upon oodles of rain.  Bummer.  I am missing that warm sunshine for sure, but it was nice to receive a warm welcome home from the rest of my little clan.
A huge thank you again to everyone who made this trip so much fun for myself and especially for Maelle.  The biggest thank you to Brent for holding down the fort while I was away and taking Aidan and the girls on some fun adventures before that rain set in.  You rock Brent!  Thanks for making this trip possible.  Love ya!

excited
























Please excuse me from this space for a week.  Yes...one whole week!  Maelle and I are off on a girl's trip to Ontario!  We are so very excited!  We have lots planned, lots of places to go, people to visit, things to see, and most importantly we will be spending time with family.  So I will be back next week, no doubt with lots of stories and pics and well quite frankly a whole lotta good stuff.  Now....I must toddle off to bed as I must get up in a few hours.  Yikes!  We have a very early flight out.  Gotta make the most of our time!

a tasty treat




















I made these this morning to take to a lovely brunch (thanks Patti!) and the best thing about these muffins....sugar free!  And healthy.  Huge points in my books.  Yummy muffins, and they are good for you.  I also realized that I don't share enough recipes in this space of mine.  So I am going to change that.  From now on, I am going to post more recipes, and to kick things off, here is the first one!

Blueberry-Banana Muffins

2/3 cup mashed bananas
1 large egg
1/2 cup milk
1/3 cup canola oil
2 cups all purpose flour (I used 1 cup all purpose, and 1 cup whole wheat)
1 tsp baking soda
1 tsp baking powder
1 cup whole fresh blueberries

Beat together banana and egg until creamy.  Add milk and oil and beat well.  Add flour, baking soda, baking powder and mix well.  Gently stir in blueberries.  Spoon batter into paper lined muffin cups.  Bake at 350 degrees for 15 minutes or until lightly browned.
Cool...but only if you have the patience to wait that long!  Makes 12 muffins.

I found this recipe in a sugar free cookbook that a friend gave to me.  So far, I am lovin' this book.  This week we are going to try to make our own crackers for something a little different.  Maybe that will be my next post!

outside

What do you get when you have a day filled with....

...works of art being created in the warm sun,


...spending time with those you hold dear,

...an afternoon full of giggles, chatter, and just plain goofiness,

...loads of time learning the basics of throwing and catching,

and kidlets just brimming with loads of smiles?

















That my friends is a one-of-a-kind recipe for a fun-filled day of living outside,  eating outside.  resting outside, and playing outside.  Soaking up some well deserved warmer weather is what we have been up to as of late.  I can't help but feeling like I am slowly switching gears into summer living already.  There is still a little over a month left of school but the last few days have ignited a little "summer spark" if you will, that has us all taking it easy.

mama's day!

One of the best things about being a mom is sharing in many special moments with your little ones.  Lately I am very thankful that my crazy, albeit extremely fun, life is filled with so much joy, so much love, and so much happiness, that somedays I could just burst at the seams.  I am slowly learning that it doesn't really matter if my shelves are dusty, or there has been laundry in the dryer for oh say a few days, or there is a trail of sand and grass from the mudroom leading every which way, as long as everyone is having fun then the day is perfect.  Now, there are many days in there that I could burst at the seams in many other ways too, but at the end of the day, no matter how good or how bad...I consider myself one lucky mama.  And today wasn't any different.  I received a very lovely gift from my little clan today....first an interactive card....


...then the reveal as to what my gift was!  Yipppeeeee!



















Now....Brent will attest to my chatting non-stop about how I thought the kids (ahem...and me) would have fun with a little device as such, so we did talk about the possibility of getting one and that it would be a fun Mother's Day gift.  Awesome!  Although, I believe today "my" iPod Touch became much more of a "family" gift than my own.  Once Aidan found out what I was getting (you can imagine his excitement- picture Christmas just a hundred times more intense!) he was like glue to me all day!  I am thinking that not only is my little present an amazing gift, but a golden ticket to good behaviour!

So....here's wishing all of you lovely mama's out there a very Happy Mother's Day.  Don't worry about the dust.  Don't worry about the laundry.  Don't worry about the dirt.  Just live in every moment, both the big and the small.

soccer

A proud day today for this little gal.  The very first day of soccer season!  This is Maelle's first year playing and she has been eagerly waiting for today to arrive for some time.  After last weekend's cancelled game (gotta love soccer weather in Calgary!) she couldn't wait to get out on that field today.  And boy did she have fun!

























A big thanks to Brent and Aidan for cheering her on and snapping a few pics for me.  I can't wait to accompany this little soccer gal next weekend and cheer her on from the side lines!  Way to go Maelle!

back in the game


Not only does spring mean the arrival of warmer temperatures, greener grass, and colourful tulips....it also means something else.  The start of another season of Geocaching!  And that is just what Aidan and Maelle, and I did this morning.  We ventured out for our first geocaching event of the year.  And we did well...3 for 3!


Maelle and her keen eyes for all things treasure related, tracked down the first one with the help of Aidan's expertise on the GPS.  This marked find number one for Maelle, without any help.



















Now as much fun as the whole search can be, I am amazed at  how long it takes these two to figure out what treasure they are going to pick.  Sometimes I think it takes them longer to decide, than it does to find the cache! 
Oh well....all good fun I guess.  I mean can you really go wrong treasure hunting in a forest on a beautiful day like today?  I think not.
