Some Apple Crisp and A Hobbit

Spring is awesome.  Before the snow hit, we went on 2 walks a day starting Monday this week.  Felt. Soo. Good.  The snow doesn't bug me much, it will melt quickly.  The only thing throwing me off is the dark morning because of the storm clouds.  It sets my day up to be a little bit dismal.  And, when I feel dismal, I tend to become domestic.  I cook, I clean, do laundry and that helps me, most of the time, get out of my slump.  

This past week, I experimented making Lemon Blueberry Scones with lemon strusel on top.  They turned out oh, so yummy.  I can't remember the exact recipe for them, so that will be in my next post.  The recipe I've decided to share today is so simplistic: Apple Crisp.  And, fresh out of the oven, if you top it with Vanilla Ice Cream....to. die. for.  We are going to bring this to a movie night at our friend's house in our ward.  A little Hobbit and some Apple Crisp - ah, the life.  So, here ya go!

Apple Crisp
1 box of Butter Recipe Yellow Cake Mix
2 cans applesauce
1-3 tsp of Cinnamon (depending on how much you like it)
1 stick butter (1/2 cup) - yeah, this is not fat free.

Instructions
In 9x13 pan, pour applesauce and spread evenly on bottom of pan.  
Add as much Cinnamon as you want! :)  In separate bowl, mix 
room-temperature butter and cake mix together with a fork until the biggest
chunks of butter are size of peas.  Sprinkle evenly over applesauce.
Bake at 350 degrees for 20 - 25 minutes until golden.  And then, devour!

Here's another list of what our family has been up to the past month :)

*Celebrated Rob's dad's 80th birthday....200 people showed up!  Those old folks know how to party and the next morning was daylight savings and 9:00 church came way too early.  
*Rob and I finally saw the movie The Bourne Legacy.   I liked it and it was very enjoyable...but Aaron Cross is no Jason Bourne.   Jason Bourne didn't need "chems" to be awesome, that's all I'm saying.
*Sam has written his own song on the Piano...which changes every time he plays it :)  It is entitled, Elmo, and goes like this: "Elmo, Elmo, Elmo, Elmo!"  while he pounds the piano keys and then he stops and looks around at us and starts clapping and says, "Yay!"  So cute :)
*Sam's favorite show to watch is a clip on YouTube of Monster Jam Monster trucks.  It's awesome and he loves to see the big "MonMons" race and roll over.
*Rob is still studying hard for his PE exam (Professional Engineer - not to be confused with a Physical Ed teacher) which is next month.
*We are looking forward to a staycation getaway in May over my birthday and Mother's Day.  We'll be spending 2 nights in Park City and then 1 night at Little America.  Sunday morning we are going to be rebel and go to the amazing (or so I've heard) brunch at the Grand America.  I'm really excited to not have to worry about anyone but Rob and I that weekend...is that selfish?  If it is, I'll feel bad later, but not now :)
*Sam loves being in Nursery!  He goes in and stays without crying!  Praise Hallalujah Sweet Amazing Grace!
