Over Thanksgiving, my dad bought (what seemed) like 90 pounds of apples. They aren't great for eating so David and I made a huge batch of apple sauce on Sunday night while we listened to Christmas music and had a fire going while the boys played in front of the Christmas tree. It was so heavenly to smell the apple sauce cooking and to feel warm and grateful for my life. There are so many apples that we made four enormous jars of it and still had two bags of apples left over. As much as I love eating apple sauce by itself (especially spiced apple sauce), I had to find a way to use some of it in recipes. I adapted this recipe and I think they turned out great! I realize that I post a LOT of pancake recipes but they are one of my favorite foods. :)
1 cup flour
1 Tablespoon sugar
1 1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1/4 (heaping) teaspoon ground cinnamon
1 cup milk
1/2 cup spiced apple sauce (or regular)
1 large egg
1 Tablespoon butter, melted
Whisk together flour, sugar, baking powder, baking soda, salt and cinnamon in a medium bowl. Pour milk into a small bowl (or glass measuring cup) and add apple sauce, egg and melted butter. Whisk well until completely combined and stir into the flour mixture (a few lumps may remain).
Preheat an electric skillet (or pan) over medium high heat and add a couple of teaspoons of oil (coconut oil is great for this if you like the flavor) and drop 1/4 cup fulls of batter and cook for 3-4 minutes per side. Serve with real maple syrup.

ReplyDeleteHaha! You WOULD notice that. :) Nope, did it all by my lonesome and that is why all the syrup is dripping to one side. My skills have yet to be honed.
