Cheddar Cheese Crackers






Ingredients:

  • 250grams grated sharp cheddar cheese
  • 2 cups all purpose flour
  • 125g salted butter
  • 1-2 tsp of garlic powder
  • 1-2 tsp of mixed herbs (oregano, basil, rosemary, etc)
  • 4 tablespoons of water

Method:
  • Mix cheese, butter and flour by hand, or using food processor. The mixture will be crumbly
  • Add water bit by bit to the mixture until mixture forms a soft dough. As water is added, knead the mixture until it forms a ball
  • Put dough on a big piece of baking sheet and flatten the dough until a rolling pin until it is 2-3mm thick
  • Use a knife to cut the dough into square
  • Poke holes in the squares until a fork. Optional
  • Bake in preheated oven at 180 degree Celsius for 15 minutes
  • Cool crackers and enjoy!

Kaya


Ingredient

8 eggs
250gram fine sugar
200gram gula melaka
500 ml thick coconut milk
5 to 10 pandan leaves

Method

  • Crack eggs into large bowl and whisk them a bit
  • Add in sugar, gula melaka, and coconut milk into eggs and mix well
  • Tie pandan leaves into a knot and put them into the mixture
  • Cook mixture on double boiler. Keep stirring
  • It will take approximately 90 minutes and lumps will start to form
  • When required texture is obtained, remove from heat. Sieve mixture to remove lumps and make the jam smoother

Chinese New Year Peanut Cookies


Ingredients

300 gram roasted peanut powder
200 gram castor sugar/fine sugar
250 gram all purpose flour
200 ml oil
1 tsp salt

Optional

Peanut for decoration
1 egg yolk for brushing

Method

  1. Mix together peanut powder, sugar, salt and flour until evenly mixed
  2. Add in oil so that the whole mixture forms a dough. Use your hands to knead the mixture
  3. Roll into small balls and put onto baking sheet
  4. Place a peanut half on top of each cookie, flattening it slightly
  5. Glaze each cookie with egg yolk
  6. Bake in preheated oven for 15 to 17 minutes at 200 degree Celsius
