Xmas Treats!


Here's the new Xmas selection!

Left: Frosted Mint Truffle: Dark chocolate mint truffle coated with icing sugar
Right: Winter Coconut Truffle :White chocolate truffle with coconut and gula malacca ( hot favE)
Back: Minty Candy Truffle :White chocolate mint truffle coated with candy cane

Wanted to do something with xmas theme this year.. and kinda wanted something for the kids.. and on came the candy truffle thingy. Candy cane and mint.. something that goes and something visually exciting. hahah. candy cane is a pain in the ass to work with thou. hahah


and a slight twist on what i've done before.. the coconut truffle has gula malacca added this time to give it a nice aroma to it and as usual the valrhona white choc gave it a lighter taste to it despite having the strong coconuty taste.

The Dark mint truffle had a lil tweak to make it look as if it has been covered in snow and ice and stuff.. and look like a frozen truffle kinda thing.. just for the season. =)

C contributed to the xmas mood by making an incredibly tedious blueberry cheese cake. Took her like hours to bake and refrigerate the cake, assembling it part by part and after that topping it off with the blue berry sauce made from scratch an hour before serving.


It tasted like woah and the blueberry sauce was just well balanced with the taste of the cheese cake. it seriously received good opinions despite the fact that that it was just the 2nd attempt and she bought the oven just a week ago..
We'll look see more creations from her in the coming future and lets see what other surprises she'll bring for us.
Now.. for some exercise to burn the calories away.

For that special someone..

something interesting done for my loved one on a very special day..
raspberry chocolate pie.. finish off with chocolate heart-shape biscuit.


so since its my first attempt, i sort of freestyled it and kept my finger crossed through out the whole process..
but i would say its pleasant-looking??hahah..

the crust is rather thin, so maybe i can try to work on it..
and probably try to sweeten the crust a little..
i tried smth else which is not exactly from any recipe, i added some shortbread crumbs in it.
it turned out rather okay, but probably more and bigger crumbs would be better.

its not exactly wat i wanted it to be, there is still room for improvements.
but its still alright cos anyhow, its still my first attempt.
but definitely more baking session for myself, and probably try out other stuffs too.

to sum up everything, the pie indeed spice up smth..(shall not elaborate on that..)
most importantly, enjoy it with your loved ones..
its the happiest thing ever=)

Brownies and Banana.. Cake

Brownies' back for a vengence.



Officially my second order that i have to prepare..



Not aesthetically pleasing.. for my standards at least, but i guess i'll work on that.


made a few adjustments to the sugar content, and the marshmallows still give me some interesting problems.. but i guess.. as long as they taste damn good ya?




the white and fluffy buggers actually make the brownies chewy and spongy... making it kinda different from what u get outside... those stone hard ones you get from cafes..



and yeah.. the final product.. 2 dozen brownies with my approval.. hope the people who get to taste them like them.. if not.. feedback is very welcomed.


Potential clients look out ya? hahaha.. if you need something to spice up those gatherings.. maybe try some of the brownies? hahaha


Not only brownies were made that day.. a new hot fav.. my aunt's freshly made banana cake was on the menu that day too.






Simple yet delicate creation, great when eaten fresh, but still retains moisture and the wonderful aroma even after a day. And made with the same principles, no preservatives, no additives, just the freshest ingredients you can get.





The finished product. The banana cake which is simple, but fit for a king. hahaha. And similar to other food items featured here, fully customisable to any individual liking, but personally i would recommend enjoying it as it is. Perfect as it is.

A Small Step to Professionalism

Yesterday was the first and formal brownie making day at my aunt's hse.
An order by a friend of mine for gifts, so i decided to try to run a pseudo-business.
The look of the beauty in the oven , can see lil bit of choc swirls and stuff.. and yeah.. its savoury.. somehow.. haH



Kinda taught her to pipe out the names of her colleagues and this is what it looks like after completion. not bad for a first time. =) i couldnt have done better.



Other than brownies i had an order for chocs from my aunt. and i finally found that orange peel i wanted. so yeah. i gave the grandmarnier choc a makeover. this is what the new and improved version looks like. =)



Made 3 sets of 8 pieces, 4 types.
The regulars will be able to tell which i made.
As seen below, we have toasted coconut truffles, my trademark chivas whiskey truffles and the new and improved grand marnier truffle.
Not seen below is the araguani dark choc truffle.



Upclose and personal.. coconut truffle. They look much more sunshine this time. toasted the coconut a lil longer, brings out the taste too. =)



My chivas truffle was the hardest to work with for this batch, very runny, but i was quite happy with the end product. arty curves and all



The final product. finally one that really looks like a gift. hahaha and yeah.. i like the outcome although i want to put more work into the grandmarnier one.. hahaha
Hope the lucky pep getting them like them. =)

Coconut Truffle
-Classic Coconut Truffle using Valrhona Ivoire White Chocolate with a Coconut Cream Ganache
















Grand Marnier Truffle
- 55% Valrhona Equitorial chocolate Ganache infused with Grand Marnier, finished using Equitorial Chocolate and Dark Chocolate Flakes
















Dark Chocolate Truffle
-65% Valrhona Manjari Dark Chocolate Ganache finished by 55% Equitorial chocolate and Valrhona Cocoa Powder
This classic dark truffle relies on the inherent taste of the chocolate i use, theres no alteration to the taste, and i have improved it by using a darker variety.. 72% Araguani Dark chocolate. Delish.


The Fruity Series


Since its mother's day, and that most mothers around me are not hardcore alcoholics, i decided to do something out of what i usually do and incorporate fruit flavours into the chocolates. Received quite well and yeah we'll be seeing them in the Classic series soon?
