CRASHING to a Halt

These sisters and I got together yesterday for a fun sisters weekend. We had big plans of shopping the Park City Outlets, catching a movie, eating out somewhere fun, etc.

Those plans came crashing to a halt - quite literally - just on the frontage road to the outlets.

So long 7-day-old car.
We are a little banged up, but no one was seriously hurt. Thank goodness!!!

Bawwwwwwwston

Remember this? Yah... well... it only took me about two months to actually post about it.

(might have had something to do with little Zachary and all his grumpiness, diarrhea, etc which we now can attribute to allergies... but who did also throw up multiple times this trip. Ugh!)

We had so much fun visiting our friends back east! We went downtown, checked out my favorite gelato place in the North End, walked around tons, went to see two movies (thanks Bel), got together with friends, played at the park, etc. It was a blast.



Thanks for hosting us, B and Mindy. We LOVED seeing you and miss you already.

Deeeeeeeee-licious Pancakes


These pancakes were so good that I had to post the recipe here as well as on my allergy blog.

This recipe is actually AMAZINGLY GOOD. (Thanks, Jen!) I will make it again and again just because I thought it was so tasty. Z gobbled it up too as did the rest of us. The recipe is doubled so that I had panckaes leftover to freeze for another day. It definitely has a strong deliciously cinnamon taste.

Dairy-free, Egg-free, Nut-free Pancakes
(Don't let that title scare you. Let's just call them
DEEEEEEEEEEE-LICIOUS PANCAKES)

2 c. flour
1/2 c. sugar
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
2 c. soymilk
4 T oil
3 T water, 3 T oil, 2 tsp baking powder mixed together
1 tsp vanilla

Whisk together first six ingredients in large bowl and set aside.
In a separate bowl combine water/oil/baking powder mixture. Then add soymilk, oil, and vanilla.
Add wet ingredients to dry ingredients and stir until smooth.
Cook in a pan sprayed with PAM or using dairy free margarine

This is the first time I have made this. I definitely plan on messing the the recipe a bit. I am going to try substituting whole wheat flour for the white flour, adding a little flax, substituting applesauce for the 4T of oil, and throwing in diced apples.

A Tale of Two Eaters

Hello. My name is Sam. And I am a horribly picky eater.

Usually when you give me ANY food (and I mean just about ANY food), my reaction is something like this...
But I'm good at trying foods. I usually spit them out but every now and then we find something I thought I hated but that I really like. It's pretty rare.
My most recent quote? "I want water for dinner. Mom - I don't like eating." I do like eating smores though. (and any chocolate)

Hello. My name is Zack. And I will eat ANYTHING and EVERYTHING...
especially what you are eating.

But, food has been a matter of concern for me.Usually it makes me feel like this...

And often like this. (Plus, my disgusting diarrhea diapers that happen once an hour have been putting my parents on edge.) But good news... We found that I have milk, egg, and peanut allergies!
So I am feeling a bit better.

We're so glad to finally discover what is bothering this little guy... and yet the thought of being an allergy parent is somewhat daunting. Any recipes, cookbooks, sources, etc for cooking milk, egg, and nut free???
We're searching over here... open to ANY AND ALL tips!
