Lemon Bars

I have been asked to help a friend with a catering event this weekend.  The theme is "Lemonade Stand".  I was assigned to make 125 Lemon Bars.  Since Monday, I've made 5 different kinds...and I have finally found a winner!!
I can't remember where the recipe came from, but it's one that I used when I was asked to make Lemon Bars for my sister, Christy's, wedding.
Preheat oven to 350 - grease your pan
1 pkg Lemon Cake Mix
1/2 cup soft butter
1 egg
2 cups finely chopped Saltine Crackers
*mix and press into bar pan - save a little extra for the toppings
Bake for 15 minutes.

3 egg yolks
1 can Eagle Brand Sweet. Milk
1/2 cup lemon juice
*pour over baked crust and add the crumbs
Bake for 20 min.

Let cool.  Sprinkle with Powdered Sugar on top.

More...

Bryton is playing tennis.  Who knew?  His BFF's girlfriend talked his BFF into playing and HE convinced Bryton to play!  He's actually pretty good!  He's on the varsity team.  My mom says he gets his talent from her :)  She played in HS, too.  I can't wait for her to come home from her mission and play Tennis with him!

Mykee went to Hawaii for Spring Break.  Jealous?  I am!

She got to go with her BFF of all time, Logan.  They spent a week seeing all the sights of Maui.

The best part?  They got to spend a week with my sweet sister, Hillary.  Man!  I miss her like crazy.  And those boys!  All 3 of them!!!  Right before Mykee and Logan went to Hawaii, Ryan and Hillary had a fun experience listening to Tsunami Siren Warnings.  They took the boys to higher ground and waited it out.  Fortunately, there was zero damage on the side of the island where they live.  My sister, JaNae gets to go see her the first of April.  Yes, I'm so jealous it makes me cry - the big tears.  If I weren't going to be in Italy at the same time, I'd be going to Hawaii with her! 


And yes... I will update my Blog and give you all details about our upcoming trip to ITALY!  We leave really soon... if you are a stalker and think you can come raid my house while we are gone, think again.  My sweet MIL is flying down to watch the kiddos.  Bryton is bummed.  He was hoping to have a few parties. 



Mykee was asked to model for a girl I grew up with... Lisa Heuer Photography.  Check out her Blog.  It's amazing.  She was so sweet with her words when she talked about working with Mykee.

Our next door neighbor "built' a bubble machine.  It was massive.  There were bubbles everywhere.
Rylee giggled the whole time.  (Well, giggled mixed with her lovely "screams")
I can't figure out how to rotate this one.  Lyndee broke the bone right by her elbow.  She was holding onto a big exercise ball, jumped off the couch, and intended to bounce up and down.  Instead, the ball moved to the right, and she fell on her elbow.  I knew right away that it was broken.  I knew the "cry".  But I turned off my "mother's instinct" and went to a meeting.  The next morning, I kept it turned off and took Mykee to the airport for her trip to Hawaii.  When I got home, the instinct forced itself on and I took her to the ER.  Luckily, the PINK SPARKLY cast only has to be on for 2 1/2 weeks.  Sadly, I won't be here when it comes off.  I hope she does as good as she did when the cast went on... she smiled the whole time.  :)

I have to include a picture of my sweet mama and the snowman she built.  I miss her.  They will be home on June 27th!  Woot Woot!

Ah... sisters.  My Aunt Pam came to help my brother and SIL... (Spencer has Hodgkin's Lymphoma and Alisha JUST had baby #4, Roxie)  We had a picnic at the park.  Not sure where the picture with Aunt Pam is!!  She's the BEST.  I just love her!!  This picture is of me, JaNae and Christy.  Aren't they darling?  Alisha, Emily and Karie were there, too... not sure where that picture is, either.

Snowy Mountains




Everytime we see snow on the Superstition Mountains, we say "Let's go play in the snow!"  But if you wait even two days, the snow is gone.  On Sunday (Feb 27) it snowed quite a bit...and looking at the weather forecast, it was going to be 80 degrees by the weekend.  We knew the snow would melt fast.  SO - I surprised the kids and took them out of school to go play in the Snowy Mountains!  JaNae took her 6 kids, I had my younger 4 and Raymond and Karie took their 5!  It took us 2 1/2 hours to find a mountain (hill) snowy enough to sled down.  The snow was already beginning to melt.  The kids had a blast sledding and making snowmen, snow chairs and snow tunnels.

My Sister...

They have started their search for their baby.  It's an exciting time for them.  Christy is one of the strongest people I know.  I just love her to death!!
She has her massage therapist license and is the BEST!!!  $25 for an hour!  And all the proceeds go to their Adoption Fund.  Seriously... the BEST massage I've ever had.  Let me know if you want her information...

Billions of Siblings

Bryton and Mykee have SO many siblings!  By having two moms and dads... it happens!  Oldest to youngest: Bryton, Mykee, Alex, Rylee, Kennady, Sydney, Dylin, Lyndee, Jayson and Nixon.  (I think I got that right??)
Mykee has always said she wanted a picture of ALL of them together.  Carter and Sandra were doing a family picture while they were here for Bryon's Eagle Court of Honor and it worked out for me to take my other four kids to meet up with their other four...  I think it's wonderful! 
"Our" four and "their" four absolutely LOVE eachother!!

My New Project

I'm looking for ways to "raise funds" to keep my girls dancing :)  I wish they didn't LOVE it so much!!!
However, they do!  (And they are really good at it.)

Happy Halloween 2010!

Don't be scared...it's only a post.  They are few and far between.

Awesome neighbor and great friend, Dawn Schween, took the girls on a "Miss America" ride around the block.

Life is incredibly busy right now.  Rick was released from the bishopric and placed in the YM program (which I think will be busier for him).  I was put into the RS Presidency (don't laugh...).  I'm helping with Youth Conference this week.  Bryton is aggressively looking for a job.  Mykee and Rylee have a billion dance rehearsals and performances coming up. Dylin turned 7 and reminds me every day that she misses being 6.  Lyndee is in Pre-School and informed me that she doesn't kiss boys anymore.  (Um, excuse me?)  Jayson turned 2 and throws the tantrum that goes with it at least 7 times a day.  DeeDee is the best dog.  She's my most obedient child.  If only I could get her to stop bringing turtle poop into the house.  Speaking of turtle, Squirt is *definitely NOT* a girl.
