Mr. Luke

Mr. Luke turned six today.



Returning home from school, all decked out in birthday attire. What a keeper!



Since Luke eats and breaths baseball, I figured this birthday cake was the perfect fit.



We had a small party at Chuck E Cheese. He invited two friends from school. Which might I add is the perfect amount of guests.

This "S" shirt is from Aunt Kellie. She made it!! When we were in Utah over spring break, Luke and his cousin Carter played Alvin and the Chipmunks the entire time. So this is Luke's new Simon shirt. He was so excited. Thanks, Kellie you made his day. Grandma and Grandpa also sent some awesome magnetic building blocks, very cool. Luke is so blessed to have such a loving family. Thank you to everyone for loving Luke as much as we do.

Ballpark

The best way to spend a Saturday is at the ballpark. With all three kids playing this year, things are a little crazy....but fun none the less. My little family is growing up.


Luke is so fun to watch. He's so intense and serious.

Mya has really stepped up to the plate this year. She is turning out to be quite the softball player.

Baked Southwestern Egg Rolls


WOW.....Just made these for Branden and I. They were so Yummy!! If you like Chili's southwestern egg rolls, these little puppies are right up your alley. I got the recipe from Annie's Eats.

Baked Southwestern Egg Rolls
Ingredients:
2 cups frozen corn, thawed
1 (15 oz.) can black beans, rinsed and drained
1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
2 cups shredded Mexican cheese blend
1 (4 oz.) can diced green chiles, drained
4 green onions, chopped
1 tsp. ground cumin
½ tsp. chili powder
1 tsp. salt
½ tsp. pepper
¼ tsp. cayenne pepper
1 package egg roll wrappers (about 24 total)




Directions:
In a large bowl, combine everything but the egg roll wrappers. Mix well to blend. Lay an egg roll wrapper out on a work surface so that one of the corners is pointing toward you and place ¼ cup of the filling in the center. Fold the tip closest to you up over the filling, roll a bit, then take the points pointing outward and fold them in toward the center. Continue rolling into an egg roll shape until a small part of the remaining point is still free. Dip a finger in water or beaten egg and lightly brush on the edges of the free corner. Finish rolling and press to seal closed. Repeat with the remaining wrappers and filling.

Preheat the oven to 425˚ F. Lightly oil a baking sheet with cooking spray. Place the sealed egg rolls on the baking sheet seam side down and spray the tops of the egg rolls with cooking spray. Bake for about 15 minutes, or until lightly brown, turning halfway through baking. Serve warm with salsa.

Everybody needs some "LOVE"

Fabulous and fun, are the best words to describe this project. I can't begin to tell you how much fun it was making "love"...ooh that sounds a little dirty. Believe me it only got dirtier as the night went on. When the sister's get together things tend to get a little out of control, but fun none the less. This most recent project was inspired by a sample over at Amy Butler's website.

Developing one's talents


I finally got a calling in our new ward here in Cali. The one calling I have been afraid of all my life, Primary pianist. I guess the Lord really wants me to get over my fear of playing in front of people. I'm sure my mother is going to be so happy that all those years of piano are finally paying off. So, I'm going to brush up on chopsticks...I hope the kids can sing "I'm a child of God" to that tune. I'm sure it's going to be fabulous (at least that's what I keep telling myself, If you say it out loud enough it's bound to come true....right?!)
