Happy Halloween

This is a picture of the breakfast I made for Andy this morning. It is a Ghost. It was originally supposed to be a Jack-o-Lantern, but I had several problems in preparing it this morning. I went to the grocery store and they did not have Cool Whip, just whip cream in a can. Although this would have made coloring it more difficult, I was willing to try except the food coloring was REALLY expensive and I didn't think it was worth it. Besides, a Ghost captures the spirit of Halloween just as much as a Jack-o-Lantern. Then I was going to make waffles, but realized that our waffle iron is square shaped not round (we haven't used it in a while). This was still OK until I managed to burn the first waffle to the top and bottom of the iron. I then switched to pancakes. I also ruined one of those before turning out an acceptable one. I topped it with whip cream and chocolate covered strawberry halves (remember this was supposed to be a Jack-o-Lantern and I think it would have been a lot better if that original idea had worked out) and put it on a plate. Andy ate it, so I guess my breakfast turned out to be a success. Hopefully next year I will get it right.

Andy Hendrickson, Husband of the Year


This weekend Andy has gone above and beyond his calling as husband and because of this he has been named "Husband of the Year". It all started out Friday morning. I had to get up early after studying all night to take a test for a continuing education course for my license (boo :( ). After I was done Andy went to the store and brought home lots of food to make me a big, wonderful breakfast. In case you didn't know Andy is a great little chef. I am even thinking of nominating him for America's Next Top Chef. Watch for him soon.

Next, Andy went with me to get a flu shot. Unfortunately our pharmacy did not have any so Andy called all over Manhattan in search of one for me.

By this time I had come down with a headache so I sat on the couch crying in pain. I then felt my forehead and was worried I had developed a fever. Andy felt my head and confirmed that I had not, but even so went out on my request for a thermometer from the pharmacy and an assortment of Halloween candy ("you know, if there is any cheap Halloween candy you can get that too," I said). Wouldn't you know Andy got all my very favorite candies (Kit Kat, Snickers, and Reese's Peanut Butter Cups) that I happily munched on with a temperature of 98.3.

On Saturday morning my headache was worse and I could not move because of the pounding. I sat very still on the couch again and watched Saturday Morning Cartoons while Andy fixed me another fabulous breakfast.

By Sunday I was feeling better, but he still allowed me to take a nap while he made me a fabulous dinner all while he should have been studying for a midterm (if I had known this he would have been studying all weekend instead of taking care of me and watching sports).

Andy is such a good husband. While I sit around and do nothing he runs all over the place getting me whatever I need and taking care of me. He helps me search for my medicine almost everyday when I lose it and in the evenings he brings me my horrible chewable vitamins with water and a lollipop to wash them down with. Today he ran to make copies and send out some letters at the post office. He is so helpful and kind and never, ever complains even when my requests are ridiculous. It is for this outstanding achievement in husbanding that Andy receives the Husband of the Year award. Please put your hands together for a wonderful husband, brother, son, etc. . . . I love him very much!

P.S. My favorite part of the weekend was when Andy said we should watch scary movies this week to get ready for Thanksgiving. I laugh every time I think about it!!!

Say Cheese

I was recently consumed by the fear that I had eaten some unpasteurized cheese and was therefore at risk of getting Listeria. I spent about 2-1/2 hours researching cheese on the Internet. Afterwards, Andy said I had to write a report on what I learned, so here it is:

Many cheeses are made with raw, unpasteurized milk. In the United States, however, the FDA requires that cheese be either 1) made with pasteurized milk or 2) aged for more than 60 days. Apparently at that point the acidity kills any potentially harmful bacteria. This was on several different websites, but to be sure I confirmed it with the actual FDA regulation itself. This means that me eating cheese today with no indication of it being pasteurized was indeed safe(unless Andy got it illegally, but I don't think that was the case . . . hopefully).

As you might imagine cheese people are all up in arms over these regulations. They have raw cheese makers associations and such angry about the regulations and the way it destroys the natural flavors of the cheeses, etc. But I am a fan of the FDA. I think they really just want to protect us and because I only like boring, pasteurized cheeses anyway I will be happy to just live inside the law for now.

Andy's Fall Plan

Over the last couple of weeks I have been able to finalize my schedule for the fall semester. Here is a summary of what I will be doing.

1. The classes that I am taking this semester are Research Methods and Cardiovascular Disease, instead of taking a third class I have arranged an internship.

2. For my internship I will be working at the gym at the Times Square Morgan Stanley building (thanks bailout). PlusOne Fitness is the company who actually runs the gym. PlusOne is a company who is contracted to run health centers in large office buildings all over the country. I am very excited about this, I will be able to learn all about Corporate Fitness as well as gain experience in Exercise Prescription.



3. I will be spending the rest of my time working with people with Parkinson's Disease. 3 professors are working on a study that will be comparing the effects that exercise and dance have on people with PD. I will be working as the fitness coordinator where I will be putting them through an exercise program twice a week. In addition to this I will help the professors put each participant through an assessment every ten weeks to track their progress.

I have been working with these participants all summer long and I have become very interested in PD. This has become more than a job, I am now very interested in the results of the study. I have developed a great love for these people, and have worked to gain more knowledge regarding this disease and how it effects people.

The more I work with them the more I want to call Rush and tell him how much this clip disgusts me.



I personally watch people go through this many times a week. And ironically it is the medication that is causing the movement. So anyone that knows anything about PD (Rush does not) can see that if anything he over-medicated himself to be able to do the ad/interview.

Well this is my plan for the next few months, I do not have any plans to coach. Unless the NYU coach gives me a call and offers me an assistant coach position.

Another Celebrity Sighting and Primary Fun

We walked out of our apartment Friday morning, around the corner, and there at 42nd and 9th was Ice-T and that other guy from Law and Order SVU filming a scene. It was quite exciting, especially for me who grew up in a home where Law and Order and CSI were very popular shows!
So here is a recap of people we have seen during our stay in New York: Ice-T and that other guy from Law and Order, Hoda Kotb from the Today Show, and Barry Williams from the Brady Bunch.

On to more spiritual matters . . . .
I am teaching Sharing Time tomorrow in Primary. The theme is "My Family Can be Together Forever Through the Ordinances of the Temple". Above is my handmade handout (we don't have a printer) . . . don't worry I will make copies at the church! Here is the plan: I will hole punch a hole at the top of the handout and put it on a piece of string. I will then talk about my family and put a Froot Loop on the string for each member. I will then tie the string at both ends and explain to the children that just as the circle I have made has no end, through Heavenly Father's plan and the ordinances of the temple our families can be together for eternity. I will then have them get with their classes and make their own necklaces and talk about each member of their families. I also thought they could write the names or draw pictures of each member on the back of their temple, as I have done below:

Do Hugh Recognize Hughs Singing With Hugh?

My Birthday Meal

I have the most amazing wife in the World, while we were on our honeymoon I told her that I loved Eggs Benedict and she did not forget. So she purchased all of the ingredients and started making a master piece.


She put the English Muffins in the Flavorwave oven since we do not have a toaster.


We also do not have an over, so she cooked the Ham in the Flavorwave also.


The recipe called for some special boiling thing which we do not have. She is so smart she improvised. What you are seeing is the cooking of the Hollandaise Sauce she made from scratch.

Some recipes call for either Bacon or Ham, that was not good enough for Stefany, she wanted me to have both.
I did not even know that Poached eggs were a real thing, she did and she made them

Here is the masterpiece with the sauce on top, you will also notice some wonderful hash browns that she made.

As you can tell this was a wonderful meal, she did an amazing job.

Happy Independence Day!!!

For the 4th of July we went to our friends' apartment around the corner. They live in a high rise and have windows facing the Hudson where this year's fireworks display was.
