Dark Chocolate Fall Spice Banana Bread

This recipe is based upon a banana bread recipe I've been developing over many years through some trial and error. It's basically an old recipe with the baking powder and sugar halved and some of the AP flour replaced with whole wheat flour. For this version, I added lots of interesting spices and dark cocoa to make it almost like a spice cake.

Preheat oven to 325.

Sift together the dry ingredients:
1/2 cup AP flour
1/2 cup dark cocoa powder
1 cup whole wheat flower
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

In a coffee grinder (or mortar and pestle), grind together equal parts:
coffee beans
Jamaican allspice
cloves
peppercorns 
(Note: if you think this will effect the flavor of your coffee the next time you use the grinder, you are correct, but in a good way.)

Mash 3 ripe bananas (when bananas are getting too ripe I stick them in the freezer, then defrost when I make banana bread or banana ice cream) with:
3 tablespoons half & half
1 teaspoon cinnamon
1 tablespoon molasses 
1 tablespoon coffee grinder spice mix (save the rest for when you make it again, or when you make pumpkin pie)
(Note: I didn't really measure these, so measures are approximate.)

In a big bowl, blend 1 stick of unsalted room temperature butter and 1/2 cup sugar until smooth.

Blend in 2 eggs, one at a time.

Switch to a spatula and mix in banana mixture. Then fold in dry ingredients. Put it all in a bread pan.

Bake for 60-70 minutes, until a toothpick stuck in the middle comes out clean.

The end result is very spicy and flavorful. I'll be the first to admit it's not for everyone. If it's not your thing, cut back on some of the spices. I also recommend a cup of coffee, hot tea, or a humongous glass of milk with it.

Healthy Living Tips I Learned From My Dog

As Xylie sometimes says, I have a hypothesis (something she picked up from watching Dinosaur Train).  My hypothesis is that animals do a better job than us of paying attention to what their bodies are instinctively telling them to do for better health.  Or, another way of saying exactly the same thing, we ignore our instincts for better health, animals do not.  If my hypothesis is correct, maybe we can learn some lessons for better health by observing our 4-legged friends.  So, here is what I have learned from watching our dog.

  1. When you're thirsty, drink some water.
  2. Get some sun once a day.
  3. Go for a walk, often. 
  4. Take an afternoon nap.
  5. When you wake up, stretch. 
  6. When you crave grass (er..salad), eat some.
  7. Sniff people's butts.
OK, number 7 is just a joke. But the rest seem like sound advice, don't you think?

Job Interview Prayer Request

Napp has a job interview today with Marietta College. Sound familiar? It should. It is where he is currently employed as a visiting professor...the position will be for a tenure track (permanent of sorts--academia works so differently it is hard to explain the terms) position.

I cannot tell you how much we all would love to stay here in Marietta.

Please keep Napp in prayer as he interviews and for the fact that he is still recovering from the flu and has a sick wife who has not been able to take care of much on the home front.

H1N1 Update

X and I both have secondary infections in our ears and lungs and are on antibiotics. Currently, my fever spiked up to 102. X's is FINALLY down and she has had two doses of antibiotic. It is all draining...but looks like we'll all make it!

Not Pretty


Ya'll...the flu...the blasted flu is not pretty.

Currently, Z and Napp have recovered. I did come down with it and am on my way up...and poor X seems to have relapsed and is going to the doctor again today. She's heartbroken to have missed so much school.

Cough...Sneeze...Oink...

The H1N1 virus (aka: Swine Flu) has hit our home. Xylie was diagnosed yesterday and since Zayden and Napp have shown the same symptoms, it is assumed that they have it as well. So far, I seem to be immune....praise God for that.

Xylie woke up Monday morning with a terrible cough and a low-grade fever. Within minutes, her fever rose to 102.5 and peaked around 103.3. She is such a trooper and is hanging in there with good spirits.

Zayden started to show symptoms at 5 pm last evening...during the night his fever jumped above 104 degrees. Oddly, he has a lot of energy for being so sick...and he talks more when sick than he does when well...I don't get it either. But because of his asthma, we're keeping an especially close eye on him.

Napp has also shon symptoms since yesterday afternoon...man is this flu hard on adults! Poor Napp's fever is in the 103.3 range and his cough is horrid.

I was able to get to the grocery store today and stock up on food. It's kind of funny though that I've been obsessing about making meals for my sick family members because they have little desire to eat anything other than apple sauce, fruit and oatmeal.

Xylie has had a few cute insights. When listed "dizzy legs" as one of her symptoms. Also today when I said that I had a bad headache and was very tired she sweetly said, "Uh-oh Mommy, you might be getting the SLIME flu."

The slime flu...I think the CDC should rename it that...it's quite appropriate no?

Future Career Plans

The X-Factor changes career goals as often as she changes her shirts...and that's OK, because she's five.

Over the past few years she has wanted to be a professional princess, Ballerina, basketball player and actress. She has also aspired to be a party planner and the next food Network star...and once was sure that she would one day become a ballet teacher.

Recently she settled on the dream of being an American Idol...she would say it with such conviction too "When I grow up, I am going to win American Idol because singing is my talent!"

However, she now thought it wise to have a back up plan and I promise you I did not try to sway her in the direction of choosing a back up plan because...she's FIVE.

She came to me and said, "Mommy, when I grow up, I am still going to be on American Idol, but if I don't win, that's OK. If I don't win, I'm going to be a Meteorologist instead because that way I can do science stuff that I love AND get to be on TV which I will also love!"

Sounds like a good plan to me.
